Honey Muffins

Preheat oven to 400°. In a large bowl, combine flour, sugar, baking powder and salt
- 2 cups all-purpose flour
- 1/2 cup sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 cup 2% milk
- 1/4 cup butter, melted
- 1/4 cup honey
CREAMED PEAS

- 2 T butter
- 2 T flour
- 1 c milk
- 1 tsp sugar
- 1/2 tsp salt
- dash pepper
- 2 c frozen peas
Grandma’s Zucchini Cake Recipe

Method 1 Preheat oven to 350°F
- Cake:
- Grandma’s Zucchini Cake Recipe
- Prep time: 15 minutes
- Cook time: 45 minutes
- Yield: Makes about 20 pieces.
- The frosting amount assumes that you are going to keep the cake in the pan and only frost the top. If you plan on removing the cake from the pan and frosting the sides, you'll want to up the frosting amounts.
- Ingredients
- 2 cups flour
- 2 teaspoons cinnamon (can sub 1 teaspoon with other spices such as allspice and nutmeg, go easy on the cloves though)
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 3 eggs
- 2 cups white, granulated sugar
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon grated lemon zest (optional, my addition)
- 2 cups (from about 3-4 regular sized zucchini) grated un-peeled zucchini (place grated zucchini in a sieve and press out some of the excess moisture before measuring)
- 1 cup chopped walnuts or pecans (my grandmother recommends black walnuts)
- 1/2 cup golden raisins (optional)
- Frosting:
- 3 ounces cream cheese, softened to room temperature (Philadelphia cream cheese recommended)
- 1/4 cup butter, room temperature
- 1 1/2 to 2 cups of powdered sugar
German Goulash

Instructions Heat the vegetable oil in a very large skillet or Dutch oven over medium-high heat
- 1 tsp. vegetable oil
- 1 lb. lean ground beef
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 stalks celery, diced
- 2 tsp. oregano
- 1 tsp. freshly ground black pepper
- 1 tsp. seasoned salt (such as Lawry's)
- 1/4 c. red wine
