American Macaroni Salad

Directions In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using
- 2 cups dry elbow macaroni, cooked, rinsed, and drained
- 1/3 cup diced celery
- 1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
- 1 tablespoon minced flat-leaf parsley
- 1/2 cup diced vine-ripened tomato (optional)
- 1/2 cup prepared mayonnaise
- 3/4 teaspoon dry mustard
- 1 1/2 teaspoons sugar
- 1 1/2 tablespoons cider vinegar
- 3 tablespoons sour cream
- 1/2 teaspoon kosher salt, plus more to taste
- Freshly ground black pepper

Spicy Cilantro Almond Pesto | The Kitchen Paper

Instructions Combine all ingredients in a food processor, and process until smooth
- 1 bunch fresh cilantro (2 cups loosely packed)
- 1/2 cup toasted almonds
- juice of 1 lime
- 1 ″ section of fresh ginger, chopped
- 3 garlic cloves
- 1/4 cup loosely packed mint leaves
- 1 Tbsp sugar
- 1/2 tsp salt
- 1/2 jalapeño (seeds included for more spice)
- 1/4-1/2 cup olive oil (you can substitute Oil with Avocados)
Broth - Beef Stock

1 Preheat oven to 400°F. Rub a little olive oil over the stew meat pieces, carrots, and onions
- 4-5 pounds meaty beef stock bones (with lots of marrow), including some knuckle bones if possible, cut to expose the center marrow, and include at least a couple veal bones if you can, for their gelatin
- 1 pound of stew meat (chuck or flank steak) and/or beef scraps, cut into 2-inch chunks
- Olive oil
- 1-2 medium onions, peeled and quartered
- 1-2 large carrots, cut into 1-2 inch segments
- Handful of celery tops, or 1 large celery rib, cut into 1 inch segments
- 2-3 cloves of garlic, unpeeled
- Handful of parsley, stems and leaves
- 1-2 bay leaves
- 10 peppercorns
