Melon Basil Summer Rolls

I’ve noticed that the world is divided into those who love watermelon and those who prefer all other melons to it
- Tamarind Dipping Sauce:
- 15 about 15 rice paper wrappers
- spicy cilantro almond pesto
- 1/2 about 1/2 purple cabbage – thinly sliced
- 1/4 – 1/2 ripe sweet melon such as Honeydew
- 2-3 medium carrots – finely shredded
- 2 cups fresh basil leaves
- large handful fresh mint leaves – optional
- 1/4 cup almond butter
- 1/4 cup tamarind paste
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon fresh grated ginger
- 1 tablespoon maple syrup or honey
- 1/2 tablespoon olive oil
- 1 teaspoon soy sauce
- 1/2 small red chili – seeded and minced (optional)
Oriental Cabbage and Cranberry Salad

Instructions In a small bowl, whisk together the oil, soy sauce, vinegar and sugar
- 1 10oz package shredded cabbage
- 4 scallions, sliced
- 1 tbsp sesame oil
- 1/4 cup reduced sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sugar
- 1/3 cup dried cranberries
- sprinkle of sesame seeds (optional garnish)

- 1 tablespoon olive oil
- 3/4 cup chopped scallions
- 2 garlic cloves, minced
- 3 tablespoons all-purpose flour
- 2 cups seafood broth or clam juice
- 2 cups low-fat (1%) milk
- 3 tablespoons dry sherry
- 1/2 teaspoon Paula Deen Lemon Pepper Seasoning
- 1/4 teaspoon white pepper
- Pinch cayenne
- 1 pound crabmeat, picked free of shell
- 1 tablespoon chopped fresh chives

- 1 package (16 ounces) spaghetti
- 1 pound ground beef
- 1 medium onion, chopped
- 1 jar (24 ounces) meatless spaghetti sauce
- 1/2 teaspoon seasoned salt
- 2 eggs
- 1/3 cup grated Parmesan cheese
- 5 tablespoons butter, melted
- 2 cups (16 ounces) 4% cottage cheese
- 4 cups (16 ounces) part-skim shredded mozzarella cheese

- 4 cups sliced fresh or frozen rhubarb, thawed
- 4 cups boiling water
- 1-1/2 cups sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon quick-cooking tapioca
- 1 egg
- 2 teaspoons cold water
- Pastry for double-crust pie (9 inches)

Southwestern Salad with Creamy Cilantro Dressing

Instructions Make dressing first by placing the last 6 ingredients in a blender
- 1 large head Romaine lettuce, chopped
- 1 small red onion, chopped
- 1 ear or corn, roasted, kernels removed
- 1 15 oz can black beans, drained and rinsed
- 1 red bell pepper, seeded and diced
- 2 Roma tomatoes, seeded and diced
- 3/4 cup plain, non-fat Greek yogurt
- 1 cup fresh cilantro
- 1/4 cup grated Parmesan cheese
- Juice from 1 lime, or more to taste
- 3 garlic cloves
- Salt and pepper to taste
