Broccoli Casserole

Cook broccoli. Drain well and set aside
- 2 packages (10 ounce) frozen chopped broccoli
- 1 cup mayonnaise
- 1 can cream of mushroom soup
- 1 cup cheddar cheese
- 2 tablespoons grated onion
- 2 eggs

- 1 lb kidney beans
- 3 tbs chili powder
- 2 tbs dehydrated onions
- 1 tbs garlic salt
- 1 tsp oregano

- 1 8 oz can reduced-sodium tomato sauce
- 1 24 oz can diced tomatoes
- 1 lb ground turkey
- 6 c water for cooking beans
Coconut Milk Coffee Creamer

- 1-2 tbsp vanilla extract
- 2 tbsp coconut oil, melted

- 2 large red or green bell peppers cut into 1/2" chunks
- 3 cloves garlic, finely minced
- 4 boneless skinless chicken breasts
- 2 tsp ground ginger
- 1 tsp salt
- 1/2 tsp pepper
- 8 ounce frozen orange juice (thaw before adding)
- You can also add chopped onion

Coconut Bread

Heat oven to 350. Whisk together eggs, milk and vanilla
- 2 large eggs
- 1 1/4 cup milk
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1-2 teaspoons cinnamon
- 1 cup sugar
- 5 ounces sweetened flaked coconut (about 1 1/2 cup)
- 6 tablespoons butter, melted or melted and browned
Tater Tot Taco Bake

Preheat the oven to 375 degrees
- 1 lb ground beef or ground turkey (I do not eat beef so will use turkey)
- 1 small onion (diced)
- 1 garlic clove (minced)
- 1 small can black olives (sliced)
- 1 (1 ounce) package taco seasoning mix
- 1 (16 ounce) bag frozen corn
- 1 (4 ounce) can green chilies (diced and drained)
- 1 (12 ounce) can black beans (drained and rinsed)
- 1 (16 ounce) bag shredded Mexican cheese blend
- 1 (16 ounce) package frozen tater tots
- 1 (10.5 ounce fluid ounce) can enchilada sauce
