ITALIAN BUTTER COOKIES

Directions **To measure 1/2 an egg, place a whole egg in a small bowl and beat with a fork to mix well
- Cookies:
- 3 sticks butter
- 1 cup sugar
- 1-1/2 eggs**(see note)
- 3 1/4 cups flour
- 1 1/4 tsp. baking powder
- 2 1/2 tsp. vanilla
- Extras:
- bag of chocolate wafers melted
- jimmies
- jam about 8 oz. I use either raspberry or strawberry
- red or green paste food coloring if you want
Crock Pot Beef Fajitas

Place the roast in the bottom of your crock
- 2 1/2 pound beef roast (I used rib roast, but any cut will do)
- 4 ounces diced green chilies
- 3 sweet peppers sliced
- 1 yellow onion sliced
- In lieu of the fresh veggies you could use a 14 ounces bag of frozen fajita vegetables**
- 3 tablespoons chili powder
- 3 teaspoons cumin
- 2 teaspoons salt
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon pepper
- Squirt of lime juice
- Tortillas
- Fajita Fixings: sour cream, cheese, salsa, lettuce, etc.
Sugar Cookie Recipe

Cream the butter and sugar together in the bowl of an electric mixer on low to medium speed
- 2 1/2 cups unsalted butter (at room temperature)
- 2 cups sugar
- 2 large eggs
- seeds from 1 vanilla bean (or 3 tsp vanilla)
- 5 cups flour
- 1 tsp baking powder (take this out if you don't want your cookies to spread
- 1 tsp salt
Ham, Asparagus, and Boursin Pinwheels

- 8 ounces Herb Boursin Cheese Spread
- 8 slices, about 1/2 ounce each, deli lean ham (zero carb)
- 8 slices fresh asparagus spears, blanched for 2 minutes in boiling water (if asparagus is thin, blanch for only 1 minute and use 2 spears per roll)
- 32 cucumber slices
- whole fresh herbs or scallion, optional for garnish

- 3/4 cup plus 2 tbs sugar
Crustless Ham & Swiss Pie

- 1 cup shredded swiss cheese
- 1/3 cup onion, chopped
