Ingredients
- 8 ounces Herb Boursin Cheese Spread
- 8 slices, about 1/2 ounce each, deli lean ham (zero carb)
- 8 slices fresh asparagus spears, blanched for 2 minutes in boiling water (if asparagus is thin, blanch for only 1 minute and use 2 spears per roll)
- 32 cucumber slices
- whole fresh herbs or scallion, optional for garnish

Step 1
1. Spread a thin layer of the Boursin cheese mixture over each slice of ham, place an asparagus spear in the center lengthwise, and roll the ham up around it.
2. Refrigerate for 30 minutes until firm, then cut each roll into four slices.
3. Place each piece atop a cucumber round, and garnish the plate or tray with any whole fresh herbs or a simple whole scallion, if desired
