Layered Lettuce Salad

Place all ingredients in a 9x13-inch dish, in layers, in the order given
- 1 head lettuce, torn in small pieces
- 1/2 c. celery, chopped
- 1/2 c. green pepper, chopped
- 1/2 c. onion, chopped
- 1 (10 oz.) pkg. frozen peas
- 5 hard-boiled eggs, chopped
- 2 c. mayonnaise
- 3 tbsp. sugar
- 1 pkg. Colby or cheddar cheese, shredded
- 12 strips bacon, cooked crisp & crumbled
Roquefort Grapes

Wash the grapes and pat dry
- 1 pound large, seedless red grapes (about 50 grapes)
- 10 ounces pecans
- 4 T crumbled Roquefort cheese
- 1 8 oz. package cream cheese, softened
- 2 T heavy cream
Banana Bread Muffins

Mix butter, sugar, egg and vanilla
- 1/2 c. butter
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1 cup mashed bananas (2 bananas)
- 1/2 cup sour cream
- 1 1/2 cup flour
- 1 tsp. soda
- 1/2 tsp. salt
Shrimp Quiche

Basic quiche: eggs, milk, salt and pepper, paprika to taste
- 5 eggs
- 1 c. milk
- 1/2 tsp. salt
- dash pepper
- paprika to taste
- 1 can shrimp
- 4 oz. mushrooms
- 3/4 c. grated Swiss cheese
- 3/4 c. grated cheddar cheese
Date Pinwheels Cookies

In a sauce pan combine dates, sugar and water
- Filling:
- 1 c. white sugar
- 1 c. brown sugar
- 1 c. shortening (1/2 c. butter and 1/2 c. Crisco)
- 3 eggs well beaten
- 1 tsp. vanilla
- 4 c. flour
- scant tsp soda
- salt
- 1 lb. dates
- 1/2 c. sugar
- 1/2 c. water
- Pecans or walnuts -Optional
BBQ Beef

Remove meat from the bone and shred
- Sauce:
- 4 lb. pot roast cooked with no seasoning
- 1 can tomato soup
- 1 small bottle Ketchup
- 1 c. water
- 2 tbsp. lemon juice
- 2 tbsp. Worcestershire sauce
- 2 tbsp. brown sugar
- 1/2 tsp. dry mustard
- 1 med. onion chopped (optional)
- 1/2 c. chopped celery (optional)
- 1/2 tsp. salt
- 1/4 tsp. pepper
Best Mac and Cheese

Preheat oven to 350°. To roast garlic: Slice ½ inch off the top of the entire head of garlic
- 1 head of garlic, roasted
- 1 teaspoon olive oil
- 1 pound Cavatappi pasta
- 1/2 pound sliced Applewood smoked bacon
- 1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)
- 1/2 cup grated Parmigiano Reggiano cheese
- 8 tablespoons butter
- 1/4 cup minced shallots
- 1/2 cup flour
- 1 quart whole milk
- 6 ounces Gruyere cheese, grated
- 8 ounces extra-sharp Cheddar cheese, grated
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 1/4 teaspoon freshly grated nutmeg
Tapioca Salad

Use juice from fruit and enough water to make 3 cups
- 1 pkg. tapioca pudding (not instant)
- 1 can mandarin orange
- 1 can (large) chunk pineapple
Beef Stroganoff

Heat large non-stick skillet over high heat and sear meat on all sides, for about a minute
- 1 lb. filet mignon or mignon tips (cut into 2 inch long and 1/4 inch wide)
- 3 T. butter
- 1 small onion, finely chopped
- 1 clove garlic
- 1 lb mushrooms sliced
- 1/2 cup beef broth
- 1 T. Dijon mustard
- 1 tsp Worcestershire sauce
- 2 T. tomato paste
- 1/4 cup heavy cream
- 1/2 cup sour cream
- 2 tsp. flour
- 2 T. minced fresh thyme
- Salt and freshly ground black pepper
- 8 ounces medium egg noodles, cooked
Lisa's Hashbrowns

Preheat oven to 350 F and spray an 11 x 14 baking dish with cooking spray
- 2 lb. frozen hash browns
- 1/2 c. margarine, melted
- 1 (10 1/4 oz.) can cream of chicken soup
- 1 pt. sour cream
- 1/2 c. onions, peeled and chopped
- 2 c. cheddar cheese, grated
- 1 tsp. salt
- 1/4 tsp. pepper
