Mary's Easy Carmel Rolls

Spread pecans in a 9x13 baking pan- I use glass
- 1 lb pkg frozen dinner rolls (Rhodes)
- 1 (3oz) pkg butterscotch pudding (not instant)
- 1 stick butter
- 3/4 cup brown sugar
- 2 tsp. cinnamon
- 2 T. water
- 1 1/2 cup chopped pecans (optional)
Peanut Bars

Cream together and put in jelly roll pan
- Topping:
- 3 c. flour
- 1 c. butter
- 1 1/2 c. brown sugar
- 1/2 tsp. salt
- 2 pkg. butter scotch chips
- 3 tbsp. butter
- 3 tbsp. water
- 1/2 c. white syrup
Rhubarb Dream Bars

Mix flour, margarine and powdered sugar with a pastry cutter and spread in an ungreased 9 x 13 inch pan
- Filling:
- 2 c. flour
- 1 c. margarine
- 10 tbsp. powdered sugar
- 4 eggs
- 2 c. sugar
- 1/2 c. flour
- 1/2 tsp. salt
- 4 c. rhubarb
Mexican Salsa

Add cornstarch to 2 cup chopped tomatoes and set aside
- 20 c. tomatoes skinned and chopped
- 3 green peppers chopped
- 7 yellow banana peppers chopped
- 8 jalapeno peppers chopped
- 5 cloves garlic chopped
- 8 onions chopped
- 1/2 to 1 c. cornstarch (I use 1 c.)
- 2 to 4 tbsp. chili powder (I use 2 tbsp.)
- 5 tbsp. salt
- 2-4 tsp. cayenne pepper
- 2 1/2 c. white vinegar
Peach - Banana Slush

Dissolve sugar in water and add thawed frozen juices and pineapple juice
- 2 c. sugar
- 6 c. water
- 46 oz. can pineapple juice
- 2 - 12 oz. frozen orange juice
- 12 oz. can frozen lemonade
- 5 bananas
- 3 peaches
- 3 quart 7 up
Sweet Lit’l Smokies

Cut bacon in thirds lengthwise
- 2 pkg. Little Smokies sausages
- 1 lb. bacon
- 4 c. brown sugar
Strawberry Fruit Dip

Blend all ingredients in the blender or mix with mixer
- 8 oz. cream cheese - softened
- 2 c. powdered sugar
- 1 tsp. vanilla
- 2/3 c. butter - softened
- 8 whole frozen strawberries
Butterscotch Peach Jam

Mix chopped peaches, lemon juice and fruit; set aside
- 1 3/4 - 2 c. chopped peaches
- 2 tbsp. lemon juice
- 1 tsp. fruit fresh
- 4 c. white sugar
- 1/4 c. brown sugar
- 3/4 c. water
- 1 box sure jell
Peanut Butter Temptations

- 1/2 c. peanut butter
- 1/2 c. oleo
- 1/2 c. white sugar
- 1/2 c. brown sugar
- 1/2 tsp. vanilla
- 1/4 c. flour
- 1/2 tsp. salt
- 3/4 tsp. soda
- 1 egg
Flemings Potatoes

Heat the cream, half and half, salt and pepper over medium heat until it simmers
- 2 c. heavy cream
- 1 c. half and half
- 2 tsp salt
- 2 tsp pepper
- 5 c. shredded cheddar cheese
- 4 lbs russett potatoes
- 4 stalks leeks- bottom 3" diced
- 1/3 of a 12 oz jar jalepeno slices- diced
