Slow Cooker Broccoli Cheddar Soup

In a frying pan, heat your oil, but don't let it get so hot it smokes
- 1/4 cup flour (whole wheat), or cornstarch
- 2 tbsp. olive oil
- 4 cups chicken broth
- 1 lb. frozen broccoli, thawed and chopped
- 4 cups shredded cheddar cheese
- 1-2 tsp. garlic powder (to taste)
- Salt and pepper to taste
Spaghetti Squash Lasagna

1. Preheat oven to 400ºF
- For the sauce:
- 3 small to medium spaghetti squash (about 5 cups cooked)
- salt and fresh pepper, to taste
- 1/3 cup part skim ricotta cheese
- 2 tbsp grated parmesan cheese
- 1 tbsp chopped parsley (or basil)
- 3/4 cup whole milk shredded mozzarella cheese
- 1 tsp olive oil
- 1/2 onion, finely chopped
- 3 cloves garlic, minced
- 14 oz Italian chicken sausage
- 14 oz (1/2 can) crushed tomatoes (I prefer Tuttorosso)
- salt and fresh pepper, to taste
- 2 tbsp chopped basil
Ham and Cheese Omelet Bake

Heat oven to 350°F. Cut small slit in center of broccoli and cheese sauce pouch
- 1 (10-oz.) box Green Giant® Frozen Broccoli & Cheese Flavored Sauce
- 1 (10.2-oz.) can (5 biscuits) Pillsbury® Grands!® Flaky Layers Refrigerated Original Biscuits
- 10 eggs
- 1 1/2 cups milk
- 1 teaspoon dry ground mustard
- Salt and pepper, if desired
- 2 cups diced cooked ham (or bacon)
- 1/3 cup chopped onion
- 4 oz. (1 cup) shredded Cheddar cheese
- 4 oz. (1 cup) shredded Swiss cheese
- 4 oz. fresh chopped mushrooms
Tater Tot Egg Casserole

Preheat oven to 400 degrees and lightly grease a 9X13-inch baking pan
- 8 eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon onion powder
- 1 onion - chopped
- 1 bell pepper - chopped
- 2 packages Fully Cooked Breakfast Sausage / or chopped bacon / or Kielbasa
- 2 cups shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 package frozen mini tater tots / or regular tots cut in 1/2
Souvlaki

Trim fat & cut meat into 1 inch cubes
- Onion salad:
- 4 lb pork, chicken, lamb or beef roast
- 1 pkg bamboo skewers (soak in water for 1 hr before using)
- 1/2 cup olive oil
- Juice of half a Lemon
- 1 tsp oregano
- 1 medium red onion
- 1 bunch fresh parsley
- 2 medium tomatoes
- 1 pkg reg sized pita bread
- Olive oil
- Salt and pepper
Balsamic Chicken

Combine the first five dry spices in a small bowl and spread over chicken on both sides
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons dried minced onion
- 4 garlic cloves, minced
- 1 tablespoon extra virgin olive oil
- 1/2 cup balsamic vinegar
- 8 boneless, skinless chicken thighs (about 24 ounces) or breasts
- sprinkle of fresh chopped parsley
Brined and Roasted Turkey Breast

1. Combine brine ingredients and mix until the sugar and salt is dissolved
- For the Brine
- 2 tbsp kosher salt
- 1 tbsp brown sugar
- 2 C cold water
- 2 C cold chicken broth
- For the Turkey
- 4 lb whole, bone-in turkey breast
- 2 tbsp olive oil
- 2 tbsp soften butter
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
Chicken Tacos (Slow Cooker)

Dissolve taco seasoning into chicken broth and mix in salsa
- 3 tablespoons taco seasoning
- 1 onion
- 1 red bell pepper
- 1/2 cup salsa
- 1 cup chicken broth
- 1 lb boneless skinless chicken breast
- can also add some onion / garlic and / or peppers
- shredded lettuce, tomatoes, cheese & sour cream for toppings
- soft or hard taco shells
Banana Shake
