Chicken Fajita (Taco Bell)

1. Combine all of the ingredients in a small bowl
- Seasoning:
- 1 tablespoon cornstarch
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon sugar
- 3/4 teaspoon crushed chicken bouillon cube
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon cumin

- 1 sweet potato cooked and diced with skin removed
- 3 scallions diced
- 1/4 cup goat cheese
- Filling Option 3:
- 1 cucumber diced
- 1 avocado diced
- hot sauce to taste or garlic mayo

- 1 cup cole slaw

- 1 cup kimchi

- 1/3 cup fig jam
- 1/2 cup goat cheese
- 1 cup diced arugula

Asian Chicken Lettuce Wraps

- For the Spicy Hoisin Dipping Sauces:
- 8 oz skinless, boneless chicken thighs, ground
- 1/4 cup water chestnuts, chopped fine
- 1/4 cup dried shiitake mushrooms
- 1 tbsp soy sauce (I used reduced sodium)
- 1/4 tsp dark soy sauce
- 1/2 tsp oyster sauce
- 1 1/2 tsp sesame oil
- 1 tbsp rice wine or dry sherry
- 1 ⁄2 tsp sugar
- freshly ground white pepper, to taste
- 2 cloves garlic, finely chopped
- 6 iceberg lettuce leaves, rinsed (careful not to break)
- 2 tbsp diced scallions
- 4 tbsp hoisin sauce
- 1/2 tsp chili sauce, I used Sriracha
- 1 tbsp warm water

1. In a saucepan, saute garlic in olive oil over medium heat
- 1/4 cup olive oil
- 9 medium cloves garlic, minced
- 6 ripe tomatos chopped
- 10 fresh basil leaves (cut long strips)
- 1/4 cup heavy cream
- 1/2 cup grated cheese
Smoky Potato Gratin

Bring a large pot of water to a boil over high heat
- Kosher salt, to taste
- 2 1/2 lb. Yukon Gold potatoes, peeled and sliced 3/16 thick on a mandoline
- 2 garlic cloves
- 8 Tbs. (1 stick) unsalted butter
- 1 Tbs. chopped fresh flat-leaf parsley
- 1 tsp. chopped fresh thyme
- Freshly ground pepper, to taste
Italian Minestrone Soup

• In a large pot saute onions, garlic, carrots, string beans celery and potatoes in olive oil for ten minutes
- 6 cups of homemade chicken or beef broth (you could use canned broth for a quick fix)
- 3 carrots cubed
- 1 onion diced
- 8 oz string beans
- 2 small zucchini halved and sliced thin
- 2 stalks of celery sliced
- 12 oz. of cabbage chopped into pieces
- 3 or 4 cloves chopped garlic
- 2 cans of 15oz peeled and crushed tomatoes
- fresh basil to taste
- 1 15oz can of cannellini beans
- 2 large potatoes chopped
- 2 Tbls chopped parsley
- fresh ground black pepper to taste
- salt to taste
- 1 pound ditalini pasta
- parmesan cheese
- 2 Tbls olive oil
