Dressing for Thanksgiving Dinner

Our family makes cornbread dressing for holidays
- 2 c. stone ground cornmeal
- 2 t. baking powder
- 1 t. salt
- 1 t. soda
- 2 T. flour, heaping
- 2 T. bacon grease
- 2 eggs
- Buttermilk
- 32 oz. chicken broth, hot
- 4 T. butter, melted
- 1 egg
- 1 onion, large
- 1 T. sage
- celery, generous amount
- salt & pepper
Orange Cranberry Relish

Grind cranberries, raisins, orange and nuts in a food processor
- 1 lb. whole cranberries
- 1/2 lb. raisins
- 1 large orange, pulp and rind
- 1 c. pecans
- 3 c. sugar
- 1/2 c. vinegar
- 1/2 t. cinnamon
- 1/2 t. allspice
Chile Con Queso

Chihuaha-style queso. Best when wrapped in a warm flour or corn tortilla like a taco
- 6 T. vegetable oil
- 1 medium white onion, sliced thin
- 12 poblano chiles, roasted, peeled, seeded, and cut into 1/4 inch strips
- 1 medium tomato, peeled and thinly sliced
- 1 scant cup milk
- 2 cups shredded Monterey Jack or Muenster cheese
- 1 1/2 t. sea salt
- Fresh tortillas, corn or flour, warmed
Kiwi Chicken Salad

Blend vinegar, sugar, mustard, salt and pepper at high speed in a blender
- 1/2 c. white wine vinegar
- 1/4 c. sugar
- 1/2 t. Dijon mustard
- 1/2 t. salt
- Dash of pepper
- 1 c. salad oil
- 1 kiwi, peeled and cubed
- 2 c. cubed, cooked chicken or turkey
- 1 4 oz. jar pimentos, sliced
- 1/2 c. thinly sliced celery
- 2 or 3 kiwi, peeled and sliced
Jeff's Chicken

Flatten boneless chicken breasts between wax paper with a rolling pin, approximately 1/4 inch
- Boneless chicken breasts
- Flour
- 1 Egg
- 2 t. olive or vegetable oil
- 2 T. wine or water
- Seasoned bread crumbs
- Parmesan cheese
- Clarified butter or light vegetable oil
Barbecue Chicken Sandwiches with Buttermilk Slaw

1. Pat chicken dry with paper towels and season with salt and pepper
- Serve with bread-and-butter pickles, extra hot sauce, and plenty of napkins.
- 4 boneless, skinless chicken breasts (about 1 1/2 pounds)
- Salt and pepper
- 3 tablespoons unsalted butter
- 3/4 cup barbecue sauce
- 1/2 cup plus 1 tablespoon cider vinegar
- 1 tablespoon hot sauce
- 1/2 cup mayonnaise
- 1/2 cup buttermilk
- 1 (16-ounce) bag shredded coleslaw mix
- 4 hamburger buns
Caramel Popcorn

Using Presto Microwave Popcorn Popper 1/4 cup of popcorn, no oil, use popcorn setting on microwave
- Popcorn to make 6 quarts popped corn
- 1 c. margarine
- 2 c. brown sugar
- 1/2 c. Karo light corn syrup
- 1/2 t. soda
- 1 t. vanilla
- 1 can mixed nuts
Grandmother B's Chocolate Pudding

My husband's grandmother was a true "Southern Belle" and this recipe was from her childhood
- 3/4 c. sugar (1 cup for those who like it sweeter)
- 3 T. flour
- 3 T. cocoa
- Pinch of salt
- 2 c. milk
- 3 egg separated
- 6 T. sugar
Peach Cobbler from the TX Tumbleweed

In a mixing bowl, combine flour, sugar, and baking powder
- 1 c. flour
- 1 c. sugar
- 2 t. baking powder
- 1 c. milk
- 1/4 lb. margarine
- 1 large can sliced peaches in heavy syrup
- 1/2 c. sugar
- 5 t. cinnamon or less to taste
Tea Time Tassies -- Pecan Pies

Crust: Let cream cheese and butter warm to room temperature
- Crust:
- 1 3oz. pkg. cream cheese
- 1/2 c. margarine or butter
- 1 c. sifted flour
- Filling:
- 1 egg
- 3/4 - 1 c. brown sugar
- 1 T. soft margarine or butter
- 1 t. vanilla
- 2/3 - 3/4 c. pecans, chopped
- Dash salt
