Grandmother's Carrot Cake

Sift together and set aside: flour, sugar, soda, salt, and cinnamon
- Icing:
- 2 cups flour
- 2 cups sugar
- 1 tsp. soda
- 1 tsp. salt
- 4 tsp. cinnamon
- 4 eggs
- 2 tsp. vanilla
- 1 cup pecans
- 3 cups shredded raw carrots
- 1 1/2 cup vegetable oil
- 1/2 cup butter
- 6 oz. cream cheese
- 1 pkg. powered sugar
- 1/2 c. pecans
- 1 cup coconut (opt)
- 2 tsp. vanilla
Gazpacho, Spicy Chipotle

This recipe makes a large quantity because the leftovers are so good, but it can be halved if you prefer
- INGREDIENTS
- 3 ripe medium beefsteak tomatoes (about 1 1/2 pounds), cored and cut into 1/4-inch cubes following illustrations below (about 4 cups)
- 2 medium red bell peppers (about 1 pound), cored, seeded, and cut into 1/4-inch cubes following illustrations below (about 2 cups)
- 2 small cucumbers (about 1 pound), one peeled and the other with skin on, both seeded and cut into 1/4-inch cubes following illustrations below (about 2 cups)
- 1/2 small sweet onion (such as Vidalia, Maui, or Walla Walla) or 2 large shallots, peeled and minced (about 1/2 cup)
- 2 medium cloves garlic , minced or pressed through a garlic press (about 2 teaspoons)
- 2 teaspoons table salt
- 1/3 cup sherry vinegar
- Ground black pepper
- 5 cups tomato juice
- 2 1/2 tablespoons minced chipotle chiles in adobo
- 1/4 cup minced fresh cilantro leaves
- 6 tablespoons lime juice
- 2 teaspoons grated lemon zest
- 8 ice cubes
- Extra-virgin olive oil for serving
Chocolate Peanut Toffee

Butter 15 X 10 X 1 inch baking pan and put on a heatproof surface
- 4 sticks (1 lb.) unsalted butter, cut into pieces
- 2 cups sugar
- 1/4 tsp. salt
- 4 cups whole cocktail peanuts plus 1 cup chopped (1 lb. 10 oz.)
- 7-8 oz. cacao bittersweet chocolate, finely chopped
Pecan Pie, Bittersweet Chocolate

Pastry dough: 1 1/4 cups all-purpose flour 1 stick unsalted butter 1/4 tsp
- 3 1/2 - 4 oz. fine quality 60-70% cacao bittersweet chocolate bar, finely chopped

- 2 cups pecan halves (7oz.), toasted and cooled.
- 3 large eggs
- 1/3 cup packed light brown sugar
- 1 tsp. pure vanilla extract
- 1/4 tsp. salt
- 3/4 cup dark corn syrup
Chicken and Parsnip Fries with Spicy Vinegar

Preheat over to 450 degrees with rack in middle
- 1 1/2 lb. parsnips
- 3 T. olive oil, divided
- 4 chicken breast halves, with skin and bone
- 1/2 cup distilled white vinegar
- 1/4 tsp. dried hot red- pepper flakes

Ricotta Fritters

Heat 1 1/2 inches oil in a large wide heavy saucepan until it registers 370 degrees
- 4-6 cups vegetable oil
- 3/4 cup all-purpose flour
- 2 tsp. baking powder
- 1 tsp. grated lemon zest
- 1 cup whole milk ricotta
- 2 large eggs, light beaten
- 2 T. granulated sugar
- 1 1/2 tsp. pure vanilla extract
- Confectioners sugar
Meatloaf

Preheat oven to 350 degrees with rack in middle
- 1 cup fine fresh bread crumbs (2 slices firm white sandwich bread)
- 1/3 cup whole milk
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 medium celery rib, finely chopped
- 1 medium carrot, finely chopped
- 2 T. unsalted butter
- 2 T. Worcestershire sauce
- 1 T. cider vinegar
- 1/4 tsp. ground allspice
- 1/4 lb bacon (about 4 slices), chopped
- 1/2 cup pitted prunes, chopped
- 1 1/2 lb. ground beef chuck
- 1/2 lb. ground pork (not lean)
- 2 large eggs
- 1/3 cup finely chopped flat leaf parsley
Portuguese Soup

Saute onions and garlic in the oil
- 1 c. onions, chopped
- 3 cloves garlic, chopped or garlic powder if you prefer
- 3 T. oil
- 1 lb. garlic flavored, smoked pork sausage, cut in bite sized pieces
- 5 c. beef stock
- 1 can kidney beans with liquid
- 1/2 head green cabbage
- 6 small new potatoes, scrubbed and quartered
- 1/4 c. vinegar
- 1 c. catsup
