Grandmother's Chocolate Cake

- 1/2 c. shortenng
- 2 c. sugar
- 3 eggs
- 1/2 c. coco, made into a paste with warm water
- 2 c. flour
- 3/4 c. buttermilk
- 2 t. soda
- 2 T. cold water
- 2 t. vanilla
- 1/2 . t. peppermint extract

- 1/4 cup butter, softened

Penne Pasta with Roasted Vegetables

Preheat the oven to 450 degrees F
- 2 red peppers, cored and cut into 1-inch wide strips
- 2 zucchini, quartered lengthwise and cut into 1-inch cubes
- 2 summer squash, quartered lengthwise and cut into 1-inch cubes
- 4 cremini mushrooms, halved
- 1 yellow onion, peeled and sliced into 1-inch strips
- 1/4 cup extra-virgin olive oil
- 1 teaspoon salt, divided
- 1 teaspoon freshly ground black pepper, divided
- 1 tablespoon dried Italian herb mix or herbs de Provence
- 1 pound penne pasta
- 3 cups marinara sauce (store bought or homemade)
- 1 cup grated fontina cheese
- 1/2 cup grated smoked mozzarella
- 1 1/2 cups frozen peas, thawed
- 1/4 cup grated Parmesan, plus 1/3 cup for topping
- 2 tablespoons butter, cut into small pieces
Chicken and Black Bean Casserole

Remove chicken meat from bones and coarsely chop or shred
- 3 large roasted chicken breast halves
- 3 T. corn oil
- 3 c. chopped onion
- 1 c. chopped green bell pepper
- 3 cloves garlic, minced
- 3 t. ground cumin
- 1 1/2 c. canned diced tomatoes with green chiles
- 1 1/2 c. salsa of choice
- 4-5 dashes hot sauce
- 3 15 oz. cans black beans, rinsed and drained
- 3 c. grated Monterey Jack cheese
- 2 c. grated sharp cheddar cheese
- 2 dozen corn tortillas, white or yellow
Sweet Vegetable Kugel

- 2 tbs unsalted butter

- 1/2 teaspoon baking soda
- 12 tablespoons unsalted butter (1 1/2 sticks), melted and cooled slightly
- 1 cup brown sugar (light or dark), 7 ounces
- 1/2 cup granulated sugar (3 1/2 ounces)
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1 - 2 cups chocolate chips or chunks (semi or bittersweet)
