Twenty Two Minute Cake

Do not use mixer. Combine flour and sugar in large bowl
- Cake:
- 2 c. flour
- 2 c. sugar
- 1 stick margarine or butter
- 1 c. water
- 1/2 c. shortening
- 3 1/2 T. cocoa
- 1/2 c. buttermilk
- 2 eggs
- 1 t. soda
- 1 t. vanilla
- Icing:
- 1 stick margarine or butter
- 3 1/2 T. cocoa
- 1/3 c. milk
- 1 lb. box powered sugar
- 1 c. chopped nuts
Chicken Pot Pie (Freezer)

I love pot pies, but find that the commercial freezer pies are really lacking in substance
- 1 1/2 lb. boneless,skinless chicken breasts
- Table salt and ground black pepper
- 2 T. vegetable oil
- 5 1/2 c. low-sodium chicken broth
- 2 T. unsalted butter
- 1 medium onion, minced
- 3 medium carrots, peeled and chopped
- 1 celery rib, chopped finely
- 1/2 c. (2 1/2 oz.) unbleached all-purpose flour
- 1/4 c. whole milk
- 2 t. minced fresh thyme leaves
- 2 T. juice from 1 lemon
- 2 (15 oz.) boxes, Pillsbury Just Unroll Pie Crusts
- 1 large egg, beaten plus 1 large egg, beaten for baking crusts
- 1 1/2 c. frozen peas, unthawed
Custard, Boiled

Boiled custard was a standard Christmas dessert served with pecan pie or fruit cake when I was a kid
- 1 qt. milk
- 6 eggs, beaten slightly
- 1/2 c. sugar
- 1/8 t. salt
- 1 t. vanilla
Cranberry Bread

Sift dry ingredients together and add all of liquids at once
- 2 c. flour
- 1 c. sugar
- 1/2 t. salt
- 1/2 t. soda
- 1 1/2 t. baking powder
- juice of 1 orange and water to make 3/4 c. liquid
- 2 T. melted butter
- 1 c. whole cranberries
- 1 c. chopped pecans.
Biscuits

Dissolve yeast in warm water
- 2 1/2 c. flour
- 1 t. baking powder
- 1 t. salt
- 1/2 t. soda
- 1/4 c. sugar
- 1/2 c. shortening
- 1/4 c. warm water
- 1 pkg. dry yeast
- 1 c. buttermilk
Strawberry Jello Cake

Beat egg whites until stiff but not dry, set aside
- Cake:
- 1 boxed White Cake Mix
- 1 box Strawberry Jello
- 3 T. flour
- 1/2 c. cold water
- 1 c. vegetable oil
- 4 eggs, separated
- 1/2 box frozen strawberries
- Icing:
- 1 box powdered sugar
- 1 stick margarine or butter
- 1/2 box frozen strawberries
Lemon-Blueberry Sour Cream Coffee Cake

Preheat oven to 375 degrees
- Topping:
- 1 1/2 c. fresh blueberries
- 3/4 c. sugar
- 1 t. cinnamon
- 1 c. pecans or walnuts, chopped
- Cake:
- 1 c. butter, softened
- 1 T. grated lemon peel
- 1 1/2 c. sugar
- 2 t. vanilla
- 2 eggs
- 2 c. sour cream
- 1/4 c. lemon juice
- 2 c. flour
- 1/2 t. salt
- 1 T. baking powder
Milk Chocolate Pecan Bars

Cookie: Preheat oven to 350 degrees
- Cookie Base:
- 1 c. unsifted flour
- 1/2 c. firmly packed brown sugar
- 1/2 t. baking powder
- 1/4 t. salt
- 1/4 c. butter, softened
- Topping:
- 2 c. milk chocolate chips
- 2 eggs
- 1/4 c. firmly packed brown sugar
- 1 t. vanilla
- 1/4 t. salt
- 1 c. chopped pecans, divided
Pasta Caprese

INSTRUCTIONS 1. Whisk oil, 2 teaspoons lemon juice, garlic, shallot, 1/2 teaspoon salt, and 1/4 teaspoon pepper to...
- 1/4 cup extra-virgin olive oil
- 2-4 teaspoons fresh lemon juice (see note above)
- 1 small garlic clove , minced or pressed through a garlic press (about 1/2 teaspoon)
- 1 small shallot , minced fine (about 2 tablespoons)
- Table salt and ground black pepper
- 1 1/2 pounds ripe tomatoes , cored, seeded, and cut into 1/2-inch dice
- 12 ounces fresh mozzarella cheese , cut into 1/2-inch cubes (see note above)
- 1 pound penne pasta or other short tubular or curly pasta such as fusilli or campanelle
- 1/4 cup chopped fresh basil
