Kale Salad

1. Place kale and eggs in a large bowl
- 6 cups very thinly sliced kale (about 1/2 large bunch), tough stems removed
- 2 hard-boiled eggs (see Tip), coarsely chopped
- 1/2 cup chopped onion
- 1 1/2 cups sliced button mushrooms
- 2 tablespoons red-wine vinegar
- 2 teaspoons whole-grain mustard
- 1/4 teaspoon freshly ground pepper
- 1/8 teaspoon salt
Minestrone with Tubettini and Capicola

1. Heat oil in a large pot over mediumhigh heat
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, sliced
- 3 carrots, cut into small dice
- 3 ribs celery, sliced
- 1 medium zucchini, diced
- 1 medium summer squash, diced
- 1 14 ounce can no-salt-added diced tomatoes
- 1/2 teaspoon dried Italian seasoning
- 1 large vegetable bouillon cubes (such as Knorr), from a 2.1-oz pkg
- 3/4 cup tubettini (such as Ronzoni)
- 1 15 ounce can chickpeas, drained and rinsed
- 1 15 ounce can kidney beans, drained and rinsed
- 1/4 pound capicola, cut into ribbons
- Grated Parmesan cheese (optional)
This Ain't Your Mama's Chili

Brown meat. Add garlic salt, garlic powder, crushed red pepper and Hot Shot pepper
- 2 pounds ground chuck
- 2 pounds hot sausage
- 1 teaspoon garlic salt
- 1 teaspoon garlic powder
- 1 teaspoon crushed red pepper
- 1 tablespoon Hot Shot pepper blend (or substitute 1 1/2 teaspoons red pepper and 1 1/2 teaspoons black pepper)
- 2 large cans (46 ounces each) tomato juice
- 2 cans (14.5 ounces each) diced tomatoes with hot chiles
- 2 tablespoons ground chili powder
- 1 teaspoon salt
- 1 teaspoon chopped garlic
- 1 1/2 tablespoons cumin
- 1/2 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1/4 cup masa
- 2 to 3 habanero peppers
- 1 small diced onion
Barley and Lentil Salad with Goat Cheese

Cook the barley according to the package directions
- 3/4 cup quick-cooking barley
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- kosher salt and black pepper
- 1 medium head romaine lettuce, torn into bite-size pieces (about 8 cups)
- 1 15-ounce can lentils, rinsed
- 1 large carrot, cut into matchsticks
- 1/4 small red onion, chopped
- 1/4 cup chopped pitted kalamata olives
- 1/4 English cucumber, chopped
- 2 ounces goat cheese, crumbled (1/2 cup)
Soup au Pistou

STEP 1 Soup: Heat oil in a large pot over medium heat
- SOUP
- 2 tablespoons extra-virgin olive oil
- 3 anchovy fillets
- 2 leeks, white and pale-green parts only, halved lengthwise, thinly sliced crosswise, washed well, and drained (about 4 cups)
- 2 small celery stalks, cut into 1/2-inch pieces (about 2/3 cup)
- Coarse salt and freshly ground pepper
- 1 small zucchini, cut into 1/2-inch pieces (about 1 1/2 cups)
- 1 small yellow squash, cut into 1/2-inch pieces (about 1 1/2 cups)
- 4 cups low-sodium chicken broth
- 1 Parmesan rind, about 1 by 3 inches
- 2 cans (15.5 ounces each) small white beans, such as navy, rinsed and drained
- PISTOU
- 1 cup lightly packed fresh basil leaves
- 2 cloves garlic, smashed
- 1/3 cup grated Parmesan, plus more for serving
- 1/4 cup extra-virgin olive oil
- Coarse salt and freshly ground pepper
Bourbon-Cranberry Shrub

Combine cranberries, sugar, and vinegar in a pot
- 1 cup fresh or frozen cranberries
- 1 cup sugar
- 1 cup white-wine vinegar
- 1/4 cup plus 2 tablespoons bourbon
- 2 tablespoons seltzer
Blueberry Shortcake

1. Heat oven to 425 degrees
- 1 1/2 cups all-purpose flour
- 1/2 cup plus 3 tablespoons sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup cold butter, cut into small pieces
- 1/2 cup cold 2% milk
- 1/2 teaspoon almond extract
- 3 cups blueberries
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 cup heavy cream
- 1/2 teaspoon vanilla extract
Chickadilla Soup

1. Place all ingredients into a 6-qt slow cooker
- 1 lb boneless skinless chicken breasts or thighs
- 30 oz diced tomatoes
- 10 oz mild enchilada sauce
- 4 oz chopped mild green chilies
- 1 quart chicken broth
- 2 15-oz cans of black or pinto beans
- 10 oz frozen corn
- 1/2 med onion, chopped
- 1 T chopped fresh cilantro
- 1 t cumin, chili powder and salt
- 1/4 t black pepper
Strawberry Flax Smoothie

Place all ingredients in a blender and blend until smooth and frothy
- 1 c frozen strawberries
- 3/4 c plain low-fat yogurt
- 1/2 c fresh orange juice
- 1 T honey
- 1 T flaxseed meal
Apple-Bourbon Potpies

You can substitute whiskey, rum, or rye for the bourbon
- 4 pounds apples, preferably a combination of Granny Smith and Rome, peeled, cored, and cut into eighths
- 1 cup sugar
- 2 tablespoons fresh lemon juice
- 3/4 teaspoon coarse salt
- 1/2 teaspoon ground allspice
- 6 tablespoons unsalted butter
- 1/3 cup bourbon
- 2 tablespoons all-purpose flour, plus more for dusting
- 1 pound thawed frozen all-butter puff pastry
- 1 large egg, beaten
- Vanilla ice cream, for serving (optional)
