Grilled Grapes on Crostini

Separate grapes into bunches of 5 or 6 grapes
- 1 lb red seedless grapes
- 1 baguette, sliced into 12 1/2" thick slices

Date Cake with Orange-Blossom Syrup

Step 1 Syrup: In a small saucepan, bring sugar and water to a simmer, stirring until sugar is dissolved

- 1/2 teaspoon ground cinnamon, plus more for serving
- 1/2 cup sugar
- 3 large eggs, room temperature
- 1/2 teaspoon pure vanilla extract
- 1/2 cup buttermilk, room temperature
- 1 cup walnuts, toasted and chopped
- 1 cup dates, pitted and chopped
- Serving
- Whipped cream, lightly sweetened
- 3 oranges (such as navel and Cara Cara), segmented
Healthy Blueberry Lemon Muffins

1. Pre heat oven to 350 degrees & line muffin tin with muffin liners
- 6 Eggs
- 1/2 cup butter or coconut oil
- 1 tsp vanilla extract
- 1/4 cup honey or maple syrup
- 1 lemon, juice and zest
- 1/2 cup coconut flour or almond flour
- 1/2 tsp. sea salt
- 1/4 tsp. baking soda
- 1 cup blueberries
Apple-Oat Muffins

Preheat oven to 400°. Place apple on paper towels; squeeze until barely moist
- 2 cups shredded peeled McIntosh apple (about 3/4 pound)
- 1 1/2 cups all-purpose flour
- 1 cup quick-cooking oats
- 2/3 cup packed brown sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup fat-free milk
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 1 (8-ounce) carton plain low-fat yogurt

Spice-Rubbed Rack of Lamb

- 2 teaspoons whole coriander seeds
- 1 8-rib rack of lamb (about 2 pounds)
