- 8 chicken cutlets (about 1 1/2 pounds total)

- 2 large eggs, lightly beaten
- 1 1/2 cups panko bread crumbs

- 1 teaspoon honey

- 1 12 ounce bag fresh cranberries
- 20 fresh sweet cherries, pitted or 1 cup frozen unsweetened pitted dark sweet cherries
- Juice and peel of 1 small orange (2 teaspoons finely shredded peel and 1/4 cup juice)
- 1 cup granulated sugar
- Pinch salt
- Caramel Apple Filling:
- 8 small to medium tart baking apples (Granny Smith)(2 to 2 1/4 pounds)
- Juice and peel of 1/2 of a lemon (1 teaspoons finely shredded peel and 2 tablespoons juice)
- 1/4 cup all-purpose flour

In a 4-qt pot, bring broth to a boil over high heat
- 4 c low sodium vegetable broth
- 2 medium carrots, peeled and julienned (2 c)
- 2 c sliced snow peas (cut on a diagonal)
- 1 small jalapeno pepper, seeded and chopped
- 1 2-in piece ginger, chopped (2T)
- 2 t low sodium tamari or soy sauce
- 2 T rice vinegar
- 2 t arrowroot powder
- 2 12-oz pkg silken tofu, drained and cubed
- 4 small scallions, slivered
Healthy Almond Butter Muffins with Bananas & Chocolate Chips

- 2 C flour
- 1 tsp baking soda
- 2 tsp baking powder
- 2 tsp ground flax seed
- 2 tsp vanilla
- 2/3 C sugar
- 3 bananas
- 1/3 C coconut oil
- 2/3 cup chocolate chips or roughly chopped chocolate
- 1/4 C almond milk
- 1/2 C almond butter (can vary depending on how much you want on top of muffins)
- Handful of sliced almonds for the topping (optional)
