Tuna and Vegetable Pasta Salad

1. Divide spinach among 4 bowls
- 4 cups packed fresh baby spinach
- 2 cups cooked whole-wheat pasta (preferably a short shape, such as cavatappi)
- 4 single-serve packets (2.6 oz. each) or cans (3 oz. each) water-packed chunk light tuna
- 2 cups cooked peas, thawed if frozen
- 1/2 cup hummus
- 1/2 cup guacamole
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
White Pizza With Artichokes, Rosemary, and Olives

Heat oven to 425° F. Brush 2 large baking sheets with 2 tablespoons of the oil
- 4 tablespoons olive oil
- all-purpose flour, for the work surface
- 1 pound pizza dough, at room temperature
- 8 ounces ricotta
- 8 ounces marinated artichoke hearts, drained and quartered
- 1/3 cup pitted green olives, halved
- 1/2 small red onion, thinly sliced
- 1/2 cup grated Parmesan (about 2 ounces)
- 1 tablespoon fresh rosemary leaves
- kosher salt and black pepper
- 4 cups mixed greens (about 3 ounces)
- 1 tablespoon fresh lemon juice
Quinoa-Pumpkin Seed Granola

Preheat oven to 350. In a large bowl combine quinoa, pumpkin seeds, almonds and flaxseed
- 3/4 c uncooked quinoa, rinsed and well-drained
- 1/2 c raw pumpkin seeds
- 1/2 c whole and/or slivered almonds
- 1/4 c flaxseed
- 1/4 c honey
- 2 T canola oil
- 1 t ground cinnamon
- 1/2 t coarse salt
- 3/4 c dried cherries, cranberries, golden raisins, and/or snipped dried apricots
Butternut Squash & Carrot Soup

1. Heat oven to 425 degrees
- 1 large onion, cut in eights
- 3 cloves garlic, whole
- 1 butternut squash (2 1/2 lbs), peeled, seeded and cut into 1-inch pieces
- 1/2 pound carrots, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups reduced-sodium chicken broth
- 1 tablespoon brown sugar
- 1/4 teaspoon ground nutmeg
Chicken Chili Nachos

1. Heat oven to 400 degrees F
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound ground chicken
- 3 tablespoons chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1 14 1/2 ounce can diced tomatoes with zesty green chilies
- 1 tablespoon tomato paste
- 8 cups corn tortilla chips (from a 9-ounce bag)
- 1 7 1/2 ounce bag blue corn tortilla chips
- 1 1/2 cups Mexican cheese blend
- Sliced canned jalapeno peppers, sour cream, prepared guacamole, diced tomatoes and fresh cilantro (optional)
Cleaner Scalloped Potatoes

1. Preheat oven to 350. Coat a 2-qu baking dish with cooking spray
- Olive oil cooking spray
- 2 t olive oil
- 1 medium onion, halved lengthwise and thinly sliced
- 1/2 t sea salt, divided
- fresh ground black pepper, to taste
- 2 cloves garlic, finely chopped
- 3/4 t dried thyme
- 1 1/2 T whole-wheat flour
- 2 c low-fat milk.
- 3 oz low-fat Monterey Jack or white cheddar cheese, grated
- 2 1/2 lb Russet potatoes, peeled and sliced as thin as possible (1/8 in or less)
- 2 oz Parmigiano-Reggiano cheese, grated
- 2 T whole-wheat panko

1. In a medium-size bowl, stir together the flour and salt
- FOR THE CRUST:
- 2-1/2 cups flour
- 1/4 teaspoon salt
- 1 cup butter

- Milk (about 2/3 cup)

- 1-3/4 cups cornflakes
- 8 cups peeled and sliced cooking apples (see first tip below)
