Pesto Penne with Roasted Chicken

Cook pasta according to package directions, adding broccoli the last 2 mins of cooking
- 8 oz dried penne or bowtie pasta (4 c)
- 2 c broccoli florets
- 1 7-oz container purchased basil pesto
- 2 1/2 c bite-size slices purchased chicken
- 1 7-oz jar roasted red sweet peppers, drained and cut into strips
- 1/4 c finely shredded Parmesan cheese
- 1/2 t coarsely ground black pepper
- more shredded parmesan cheese for topping (optional)
Baked Stuffed French Toast

Butter bottom and sides of a 9-by-13-inch baking dish
- Unsalted butter, room temperature, for baking dish
- 1 14-inch loaf rustic bread, such as pane Pugliese, cut into 8 slices
- 8 thin slices ham, plus more for topping (optional)
- 8 ounces Gruyere, thinly sliced, plus more for topping (optional)
- 8 large eggs
- 2/3 cup whole milk
- Coarse salt and freshly ground pepper
- Pure maple syrup
Apple-Walnut Kale Salad

Combine vinegar, walnut oil, kosher salt, brown sugar, and pepper
- 1 tablespoon cider vinegar
- 1 tablespoon walnut oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon brown sugar

- 4 cups torn kale leaves
- 2 cups torn Swiss chard leaves
