Gingered Shrimp with Soba

1. Bring a pot of lightly salted water to a boil
- 2 8 ounce package Eden Organic Soba Pasta
- 2 tablespoons olive oil
- 1 pound shrimp, peeled and deveined
- 1 piece (5 inches) ginger, grated (1/4 cup)
- 4 cloves garlic, chopped
- 1 8 ounce bag shredded carrots (21/2 cups)
- 1 head napa cabbage, sliced into 2-inch strips (10 cups)
- 1 1/4 cups sliced scallions
- 1 cup vegetable broth, chilled
- 3 tablespoons low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
Healthy Cornbread Muffins

Preheat oven to 350°F. Line a standard muffin tin with paper liners or oil with canola spray oil
- 1 1/2 cup cornmeal
- 1/2 cup whole wheat pastry flour or 1/2 cup all purpose GF baking flower
- 2 tablespoons ground flaxseed or chia seeds
- 2 teaspoons baking powder
- 1/2 teaspoon fine sea salt
- 1 cup unsweetened almond milk
- 1/2 cup unsweetened applesauce
- 1/4 cup honey
- 1 cup fresh organic corn kernels or frozen organic corn kernels, thawed
- 1 cup chopped nuts, such as pecans or walnuts
Pumpkin Custard Squares

1. Heat oven to 350 degrees
- Crust
- 2 cups crushed gingersnaps (36 cookies)
- 6 tablespoons unsalted butter, melted
- 1 tablespoon granulated sugar
- Filling
- 2 tablespoons cornstarch
- 2 tablespoons granulated sugar
- 1 12 ounce can evaporated milk, or 3/4 cup milk
- 1 egg
- 1 15 ounce can solid-pack pumpkin (not pie mix)
- 2/3 cup packed dark-brown sugar
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- Whipped cream (optional)
Cinnamon Almond Stars

Cookies: Pulse almonds with 1/4 cup brown sugar in a food processor until finely ground
- COOKIES
- 1 cup (5 ounces) almonds, toasted
- 1 1/2 cups packed light-brown sugar
- 2 1/2 cups all-purpose flour, plus more for dusting
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon coarse salt
- 1 stick unsalted butter, room temperature
- 1 large egg, lightly beaten
- 2 tablespoons Marsala
- ICING
- 2 1/4 cups confectioners' sugar
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon finely grated orange zest
- Gold pearlized sugar (available at baking-supply stores)
Seven-Green Kale Salad with Buttermilk Dressing

1. Make dressing: In a small bowl, whisk together all dressing ingredients
- Dressing:
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 2 tablespoons white wine vinegar
- 1 clove garlic, minced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Salad:
- 1 cup pine nuts
- 2 pounds Tuscan kale (also called dinosaur or lacinato kale), stems removed and discarded
- 1/4 cup olive oil
- 1 teaspoon kosher salt
- 2 green apples, cored and finely diced
- 1 large English cucumber, finely diced
- 1/2 cup each finely chopped dill, flat-leaf parsley, mint and basil
Turkey-barley vegetable soup

Brown turkey in olive oil in a saucepan; remove
- 1/2 pound ground turkey
- 1 chopped onion
- 1 chopped carrot
- 1 chopped stalk celery
- 6 c chicken broth
- 1/2 c pearl barley
- salt and pepper
- 3 c chopped baby spinach
Peppermint Fudge

1. Line an 8-inch square pan with parchment or waxed paper, allowing the paper to hang over the sides
- 24 ounces (about 4 cups) white chocolate chips
- 1 (14 ounce) can sweetened condensed milk
- Pinch of salt
- 1 teaspoon vanilla extract
- 1 1/4 cups coarsely crushed peppermint candies (I used my Pampered Chef food chopper to crush the peppermints. I also used red & green candy canes to make the fudge even more colorful!).
Clean Eating Cream Soup

In a saucepan or pot, heat oil on med
- 2 T olive oil
- 1/4 c minced onion
- 3 T whole wheat flour
- 1 c low sodium chicken broth, boiled and reduced by half
- 1/2 c skim milk
- Optional Top Flavor
- Cream of Mushroom - 1 1/2 c chopped cremini mushrooms
- Cream of Celery - 1/2 c minced celery
- Cream of Chicken - 1 c finely diced cooked chicken
Tropical Fruit Pudding

1. In a food processor or blender, put syrup, tofu, mangos, vanilla, salt and coconut extract, if desired
- 2 tablespoons maple syrup or other sweetener
- 24 ounces silken tofu (about 3 cups)
- 2 mangoes, peeled, pitted and cut into big chunks
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/4 teaspoon coconut extract, optional
- 1/2 large pineapple, peeled, quartered and cored
- 3/4 cup unsweetened shredded coconut
Strawberry Malt Napolean

- 1 sheet frozen puff pastry
- 5 cups sliced fresh strawberries, divided
- 6 ounces white chocolate, chopped
- 1 package (8 ounces) cream cheese, softened
- 1 teaspoon vanilla
- 1 cup powdered sugar
- 1/3 cup malted milk powder
- 2 cups heavy cream, whipped
- Strawberry syrup, optional
