Gallo Pinto

1. Pour the oil into a large skillet set over medium heat
- 1 tablespoon canola oil
- 1 onion, chopped
- 1 red pepper, stemmed, seeded, and chopped
- 2 cloves garlic, chopped
- 1 cup cooked rice
- 1 cup of canned beans, with liquid
- 4 tablespoons Salsa Lizano (or Worcestershire sauce)
- Salt and black pepper
- Handful of cilantro, chopped
Slow Cooker Bean and Spinach Enchiladas

In a medium bowl, mash half the beans
- 1 15.5-ounce can black beans, rinsed
- 1 10-ounce package frozen chopped spinach, thawed and squeezed of excess liquid
- 1 cup frozen corn
- 1/2 teaspoon ground cumin
- 8 ounces sharp Cheddar, grated (2 cups)
- kosher salt and black pepper
- 2 16-ounce jars salsa (3 1/2 cups)
- 8 6-inch corn tortillas, warmed
- 1 medium head romaine lettuce, chopped (6 cups)
- 4 radishes, cut into matchsticks
- 1/2 cup grape tomatoes, halved
- 1/2 cucumber, halved and sliced
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- sliced scallions, for serving
Chocolate-Spiked Oatmeal Cookies

Preheat oven to 350°F and lightly spray 2 baking sheets with cooking spray
- Olive oil cooking spray
- 1 1/4 cups quick-cook old-fashioned oats
- 1/2 cup whole-wheat pastry flour
- 2 tsp flaxseed meal
- 1 tsp cinnamon, ground
- 1/2 tsp baking powder
- 1/4 tsp sea salt
- 1/2 cup raw honey
- 1 large egg white
- 2 tsp unsalted almond butter
- 1 tsp pure vanilla extract
- 1/4 cup dark bittersweet chocolate chips (about 40 grams)

Spaghetti and Bean Balls

1. Preheat oven to 375 degrees Fahrenheit
- 2 15 oz cans pinto beans, drained and rinsed
- 1 carrot, minced (or processed) A big handful of fresh parsley, minced (or processed)
- 1 clove garlic, minced (or processed)
- 1/2 cup whole wheat breadcrumbs
- 1 Tbsp olive oil or canola oil
- 1-2 Tbsp your favorite Italian seasoning (basil, oregano, garlic, salt, etc) salt and pepper 3 cups of marinara sauce
Vegetable Orzo Soup

To make the Pistou: Combine all ingredients in a food processor
- PISTOU:
- 1/2 c dry cannellini beans
- 4 c water
- 1 bouquet garni
- 1 med onion, chopped (1/2 c)
- 3 cloves garlic, minced
- 1 T EVOO
- 3 c chicken broth
- 8 oz green beans, halved
- 1/2 of a fennel bulb, chopped (about 2/3 c)
- 1 med zucchini, chopped
- 2 med tomatoes
- 2 sprigs fresh thyme
- 1/2 t salt
- 1/3 c dried orzo
- 2 c firmly packed basil
- 6 cloves garlic
- 2 T grated Parmigiano-Reggiano cheese
- 2 T EVOO

- 1/2 T cocoa powder
- 6 oz nonfat Greek yogurt
- 1/4 c fresh raspberries
- Nut-Butter Melt:
- 1 T almond butter
- 1 piece whole wheat bread
- 1 T mini chocolate chips
- Sweet Corn:
- 1 t sugar
- 1 t cocoa powder
- 1 t ground cinnamon
- freshly popped popcorn
- Cherry Delight:
- 1 T lowfat cream cheese
- 1 t chocolate syrup
- 1 t cherry jam

- Rocky Road Trail Mix:
- 1 T almonds
- 1 T mini chocolate chips
- 1 T mini marshmallows

Carrot-Pineapple Smoothie

- 2 15-oz cans garbanzo beans, rinsed and drained
- 2 14.5 oz cans diced tomatoes, undrained
- 1 c chicken broth
- 1 bay leaf
- 2 T lime juice
- 1 9-oz package fresh spinach
- Hot cooked rice
