Bruleed Winter-Bean Soup

Heat oil in a medium saucepan over medium heat
- 2 tablespoons extra-virgin olive oil, plus more for drizzling
- 1 small onion, finely diced
- 1 stalk celery, finely diced
- 1 carrot, peeled and finely diced
- 1 can (15 ounces) diced tomatoes
- 1 2-inch piece Parmesan rind
- 1 can (15 ounces) white beans, drained and rinsed
- 8 ounces kale, stems removed, cut into 1-inch pieces (6 cups)
- Coarse salt and freshly ground pepper
- 4 slices country bread, cut into 1-inch pieces
- 1 1/2 cups coarsely grated young Asiago
Artichokes with Roasted-Pepper Dip

Preheat broiler. Cut bell peppers in half lengthwise, discarding seeds and membranes
- 2 red bell peppers
- 2 artichokes (1 lb)
- 12 c water
- 3 lemon slices
- 1 bay leaf
- 2 t olive oil
- 2 t Dijon mustard
- 1 t red wine vinegar
- 1/4 t dried fines herbes
- 1/8 t black pepper
- 1 T finely crumbled feta cheese
- 1/2 t capers

- 12 graham crackers, finely ground (about 1 1/2 cups)

- 1/4 cup granulated sugar
- 1/4 teaspoon coarse salt
- FILLING
- 4 large egg yolks
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 3/4 teaspoon coarse salt
- 2 3/4 cups whole milk
- 1 vanilla bean, split and scraped
- 3 tablespoons unsalted butter, room temperature, cut into pieces
- 3 cups raspberries (about 12 ounces)
- 1 cup heavy cream
- 2 tablespoons confectioners' sugar
Leek-Crusted Beef Tenderloin

Step 1 Let beef tenderloin stand at room temperature 1 hour
- 1 2 1/2-pound beef tenderloin, tied with kitchen string
- 2 tablespoons extra-virgin olive oil, plus more for rubbing
- Coarse salt and freshly ground pepper
- 1 leek, white and pale-green parts only, washed well and chopped (about 1 cup)
- 1/4 cup packed fresh flat-leaf parsley leaves, plus sprigs for garnish
- 1 ounce Parmesan, finely grated (1/3 cup)
- 1/2 cup panko breadcrumbs
Black Bean Soup

1. Soak the beans overnight or 6 to 8 hours prior to cooking
- 1 pound dried black beans (about 2 1/2 cups), rinsed
- 2 medium onions, chopped
- 2 large red bell pepper, seeded and chopped
- 4 cloves garlic, finely chopped
- 1 16oz. jar organic salsa medium to hot
- 1 tablespoon ground cumin
- 1 teaspoon ground chipotle pepper
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons nutritional yeast
- 1 tablespoon fresh lime juice
- 1/2 ripe avocado, chopped
Blueberry Almond Smoothie

- 1 Cup Frozen Blueberries
- 1 Cup Almond Milk
- 1 TBLS. Almond Butter or Raw Almonds
- 1 TBLS. Cocoa Powder
- 1 TBLS. Activated Chia Seeds

Glazed Lemon Scones

Heat the oven to 400°. Grease a large, heavy baking sheet (preferably not a dark one) and set it aside
- SCONES:
- 2 cups flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Finely grated zest of 1 lemon
- 3 tablespoons cold unsalted butter, cut into 1/4-inch pieces
- 1 cup heavy or whipping cream, plus a little for brushing
- 1 egg yolk, beaten slightly
- 1/2 teaspoon vanilla extract
- LEMON GLAZE:
- 1 cup confectioners' sugar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon lemon extract
- 1 tablespoon melted butter
- 2 tablespoons heavy or whipping cream
Whipped Yogurt with Pineapple and Dried Fruit

- 2 cups plain low-fat Greek yogurt
- 2/3 cup heavy cream
- 2 tablespoons honey
- 1 teaspoon finely grated lime zest
- 2 cups coarsely chopped fresh pineapple
- Sliced dried fruits, such as papayas, plums, and strawberries, for serving
- Shaved coconut or unsweetened shredded coconut, toasted, for serving
- Freshly grated nutmeg, for serving (optional)
