Clam Chowder-My Best *****

Saute bacon until crisp. Remove bacon to paper towel
- Bacon (12 to 16 ounce)
- 2 cups celery, diced small-some big
- onion 1 whole or so, diced small
- celery salt
- white pepper
- 3 cans clams drained-save juice
- 1 bottle clam juice
- 2 large potatoes- big chunks
- 1 quart whipping cream
- 2-3 Tablespoons flour
- Potato Flakes
Chilies Rellanos

Insert a strip of cheese into each chili
- 1/4 pound Jack Cheese cut in strips
- 2 4 ounce cans green chilies -drained
- 3 separated eggs
- 3 Tablespoons flour
- Salad oil for deep frying
- Flour
- 1/4 cup grated cheddar
- Sauce
- 1 1pound can stewed tomatoes
- 2 Tablespoons finely chopped onion
- 1 chicken bouillon cube
- 1/2 teaspoon salt
- 1/4 teaspoon dried oregano leaves
- Dash pepper
Hot Rolls

Mix together warm water sugar salt
- 2 cups warm water or potato water
- 1/2 cup sugar
- 1 1/2 teaspoons salt
- 2 cakes compressed yeast
- 1 egg
- 1/4 cup shortening
- 6 1/2 to 7 cups flour
Cranberry Pudding

Use bundt pan. Put oil in pan then wipe out well with paper towel and dust with powdered sugar
- Sauce:
- 3 cups raw cranberries
- 3/4 cup raisins
- 3/4 cup light molasses
- 1/2 cup boiling water
- 2 1/4 cups flour
- 3 teaspoons soda
- 1 cup chopped nuts
- 2 cups sugar 1 cup light cream 1/2 cup butter 2 teaspoons vanilla
Savory Turkey Stroganoff

Directions 1. In a large nonstick skillet, heat 2 teaspoons of the oil over high heat
- 1 tablespoon olive oil
- 3/4 pound turkey cutlets, cut into thin strips
- 2 large shallots, thinly sliced
- 1 box (10 ounces) cremini mushrooms, sliced
- 1 cup baby carrots, sliced
- 1 clove garlic, minced
- 1 teaspoon hot paprika
- 1/4 teaspoon salt
- 1 cup chicken broth
- 2 teaspoons tomato paste
- 2 teaspoons Worcestershire sauce
- 2 teaspoons cornstarch
- 1/3 cup reduced-fat sour cream
Refried Bean Soup *****

Mix all together in large sauce pan and heat thru
- 1 can fat free refried beans
- 1 can chicken broth
- 1 can corn
- 1 can black beans
- 1 can stewed tomatoes
- 1 can green chilies
- 1/4 cup salsa
- shredded cheese, corn chips sour cream to garnish.
Tomato Bisque

Depending on the season, you can serve this soup hot or cold
- 2 medium onions, chopped
- 2 large garlic cloves, minced
- 4 tablespoons butter
- 1 (28 ounce) can whole tomatoes
- 1 (46 ounce) can tomato juice
- 2 bay leaves
- 1 (8 ounce) package cream cheese
- 1 pint light cream
- salt and pepper
- lemon juice

- 6 whole Sweet/spicy Pickle Slices, Diced (about 1/2 Cup Diced)
- 3 whole Green Onions, Sliced (white And Dark Green Parts)
- 1/2 cup Mayonnaise
- 1 Tablespoon Red Wine Or Distilled Vinegar
- 3 teaspoons Sugar, More Or Less To Taste
- 1/4 teaspoon Salt, More To Taste
- Plenty Of Black Pepper
- 1/4 cup Milk (more If Needed)
