PB and Strawberry Pockets

1. Open pita bread halves to make pockets
- 2 large white or whole wheat pita bread rounds, halved crosswise
- 1/2 cup chunky peanut butter
- 1/4 cup raisins
- 1 cup sliced or chopped fresh strawberries
- 2 tablespoons dry roasted sunflower kernels
Root Beer Float Cookies

Directions: Preheat oven to 375º
- Cookie Ingredients:
- 1 cup butter, softened
- 2 cups packed brown sugar
- 2 eggs
- 1 cup buttermilk
- 1 tsp. root beer extract or concentrate
- 4 cups flour
- 1 tsp. baking soda
- 1 tsp. salt
- Frosting Ingredients:
- 4 cups powdered sugar (or icing sugar)
- 3/4 cup butter, softened
- 3 Tbsp. milk
- 1 tsp. root beer extract or concentrate
Luscious Lemon Delight

1 Preheat the oven to 375F
- 1 cup all-purpose flour
- 1/2 cup plus 2 tablespoons chopped pecans, divided
- 8 tablespoons (1 stick) butter, softened
- 1 (8-ounce) package cream cheese, softened
- 1 cup confectioners' sugar
- 1 (8-ounce) container frozen whipped topping, thawed, divided
- 2 (3.4-ounce) packages lemon instant pudding mix
- 2 2/3 cups milk
Old-fashioned Pull-apart Buns

In a large bowl, combine all the ingredients (except the melted butter) and stir until you have a soft dough
- 3 1/2 cups unbleached all-purpose flour
- 2 tsp. active dry yeast
- 3 Tbsp. nonfat dry milk
- 2 Tbsp. sugar
- 1 1/2 tsp. salt
- 1/4 cup butter, softened
- 2/3 cup lukewarm water
- 1/2 cup lukewarm milk
- melted butter, for brushing on top
Peachy Keen Bars

Preheat oven to 350 degrees
- 1 pkg dry cake mix-white, yellor or french vanilla
- 1/3 c butter, room temperature
- 2 lg eggs, divided
- 29 oz can light peach slices, drained
- 8 oz cream cheese, room temperature
- 1/3 c sugar
- 1 tsp pure vanilla extract
Mexican "Grilled" Corn

Cook corn per your favorite method - boiling water; microwave; etc
- 1/4 cup Vegenaise (feel free to substitute regular or light mayonnaise; we just like Vegenaise a lot more)
- 3 TB sour cream
- 3 TB minced fresh cilantro leaves
- 1 medium garlic clove, minced or pressed
- 1/2 tsp chili powder
- 1/4 tsp ground black pepper
- 1/4 tsp cayenne pepper (optional)
- 4 tsp juice from 1 lime
- 1 oz grated Cotija cheese (it's worth it to find this cheese instead of substituting something like Pecorino)
- 6 large ears of corn, husks and silk removed
Saucy asian meatballs

Preheat oven to 400. In a large bowl, mix together meatball ingredients until well-combined
- Meatball Ingredients:
- 2 lbs. ground pork or ground beef
- 2 tsp. sesame oil
- 1 cup Panko or breadcrumbs
- 1/2 tsp. ground ginger
- 2 eggs
- 3 tsp. minced garlic
- 1/2 cup thinly-sliced green onions
- optional garnish: toasted sesame seeds, sliced scallions
- Asian Sauce Ingredients:
- 2/3 cup hoisin sauce
- 1/4 cup rice vinegar
- 2 garlic cloves, minced
- 2 Tbsp. soy sauce
- 1 tsp. sesame oil
- 1 tsp. ground ginger
z Powdered Dishwasher Detergent/Scouring Powder

What went in my jar: borax, washing soda, kosher salt, fruit fresh, 20 drops lemon scented essential oil
- 1 cup Washing soda or Baking soda (I've seen many recipes that use both..so use whatever you have on hand)
- 1 cup Borax (Borax and baking soda/wash are both natural disinfectants and mild abrasives.)
- 1/4 cup Kosher salt (reduces the effects of hard water)
- 1/4 cup citric acid (available at brewing places or Amazon.com. Or as an alternative you can use the same amount of Fruit Fresh or two packets of Lemonade-Flavored Kool-Aid, ONLY lemon and ONLY unsweetened!)
Caramel Stuffed Apple Cider Cookies

Preheat oven to 350° F

- Ingredients
- 1 cup softened butter
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 box (7.4 oz) Alpine Spiced Apple Cider Instant Original Drink mix -not sugar free- all 10 packets (I found this in my grocery store near the hot chocolate mixes.)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 3 cups all purpose flour
- 1 bag Kraft Caramels (14 oz)
