Directions Preheat the oven to 350 degrees F

  • Tomato Relish:
  • Extra-virgin olive oil

  • 2 garlic cloves, minced

  • 1 (12-ounce) bottle ketchup
  • 1 tablespoon Worcestershire sauce

  • Meatloaf:
  • 3 slices white bread, crusts removed, torn into chunks by hand
  • 1/4 cup whole milk
  • 1 1/2 pounds ground beef
  • 1 pound ground pork
  • 2 eggs
  • Leaves from 2 fresh thyme sprigs
  • Salt and freshly ground black pepper
  • 3 to 4 bacon slices

In the south, and particularly in the mountains where they grow huge heads of crisp cabbage, chow-chow is a favorit...

  • Ingredients:
  • 2 2 to to shredded cabbage (about one medium head). I use the same grater to shred the cabbage that I do to make slaw.
  • 1/2 1/2 1/2 cup sweet onions chopped fine
  • 1/2 1/2 1/2 cup chopped green or red bell peppers (optional)
  • 2 2 2 Tablespoons salt
  • 4 to 6 and sprinkle with salt. Let stand 4 to 6 hours in the refrigerator. Drain well.
  • 10 to following ingredients and simmer 10 minutes. Use a pot large enough to put the vegetable mix in later.
  • 2 2 2 cups vinegar
  • 1 1/2 1 1/2 1/2 cups sugar
  • 2 2 2 teaspoons dry mustard
  • 1 1 1 teaspoon turmeric
  • 1/2 1/2 1/2 teaspoon ground ginger
  • 2 2 2 teaspoons celery seeds
  • 2 2 2 teaspoons mustard seed
  • to to to have to sit before it's ready to eat. After it cools, you can start tasting it. You won't be able to tell where the cabbage starts and the onions end. The flavors blend together perfectly.

1 Remove just the tomatoes from the can of whole tomatoes, place in a medium sized non-reactive mixing bowl

  • 1 28-oz can 1 28-oz can whole tomatoes, preferably fire-roasted (Muir Glen makes an excellent product.)
  • 1 clove 1 clove of garlic, or 1/2 teaspoon garlic salt
  • 2 2 green onions (scallions), chopped, including the green parts (about 1/3 cup)
  • 1 Tbsp 1 Tbsp olive oil
  • 2 teaspoons 2 teaspoons red wine vinegar
  • 1/4 teaspoon 1/4 teaspoon dried oregano (can supplement with fresh)
  • 1/4 cup 1/4 cup of very loosely packed fresh chopped cilantro
  • Salt
  • Freshly ground black pepper
