Wine Country Chicken Salad with Cranberries & Pecans

The cranberries, honey, celery and pecans add a tasty sweetness and crunchy texture to a traditional chicken salad
- 4 cups chicken breast, cooked and chopped
- 1 cup celery, chopped
- 3/4 cup dried cranberries
- 3/4 cup pecan, halved
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 4 teaspoon sugar
- Sea salt and black pepper to taste
- 1/2 teaspoon poppy seeds, optional
Broccoli Slaw

Prepare dressing by combing sugar, oil, vinegar, water and flavor packets, mixing well
- Dressing:
- 1/2 c. sugar
- 1/2 c. vegetable
- 1/3 c. white vinegar
- 1/4 c. water
- 2 flavor packets from Ramen noodle soup
- Salad:
- 1 c. slivered almond
- 2 (3 oz.) oriental flavor Ramen noodle soup
- 1 c. shelled sunflower seed
- 1 bunch green onions, chopped
- 1 (16 oz.) package broccoli slaw
Milky Way Cake

Melt candy bars and margarine in double boiler and set aside to cool
- CAKE:
- 4 10-cent Milky Way candy bars
- 1 stick butter margarine
- 2 c. sugar
- 1/2 c. vegetable oil or 1 stick margarine
- 4 whole eggs
- 2 tsp. vanilla
- 1 c. buttermilk
- 2 1/2 c. plain flour
- 1 tsp. salt and 1/2 tsp. soda
- 1 c. pecan or walnuts (chopped fine)
- ICING:
- 1 1/2 milky way candy bars (or 3 small ones)
- 1 stick butter
- 2 tbsp. sweet milk
- 1/2 tsp. powdered sugar

Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved
- 3/4 c. boiling water
- 1 pkg. (4-servlng size) Jell-O brand orange flavor gelatin
- ice cubes
- 1/2 c. cold water
- 1/2 c. orange sherbet, softened
Applesauce Raisin Bread

- 1 c. applesauce
- 1/2 c. oil
- 1/2 c. sugar
- 1 3/4 c. flour
- 1 c. raisins
- 1 egg, slightly beaten
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. salt
- 1/2 tap. nutmeg
- 1/2 c. chopped nuts, optional vegetable oil spray

Beat eggs in a bowl until blended
- 3 eggs
- 2 1/4 c. sugar
- 1/4 c. vegetable oil
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. grated orange peel
- 3/4 c. orange juice
- 3 1/2 c. flour
- 2 c. grated zucchini
- 1 c. shredded coconut
Spinach Stuffed Manicotti

Cook manicotti shells as directed on package; drain
- 1 pkg. (8 oz.) manicotti shells
- 1 small onion, chopped (about 1/4 c.)
- 1 pkg. (10 oz.) frozen chopped spinach, thawed and drained
- 1 tbsp. instant chicken bouillon
- 1/2 tsp. garlic powder
- 1/2 tsp. dried thyme leaves
- 1 1/2 c. creamed cottage cheese
- 2 eggs
- 1/4 c. grated Parmesan cheese
- 1 can (8 oz.) tomato sauce
- 1 c. shredded mozzarella cheese (about 4oz.)
