Mom's Favorite Oatmeal Cookies

Heat oven to 375 degrees. Beat together butter and sugars until light and fluffy
- 1 1/4 c. butter or margarine (softened)
- 3/4 c. firmly packed light brown sugar
- 1/2 c. granulated sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/2 c. all purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 3 c. Quaker Oats (quick or old fashioned--uncooked)
- 2 c. chocolate chip morsels (dark, semi-sweet or milk chocolate)
Breakfast Casserole

Preheat oven to 325 degrees F
- 1 pkg. regular flavor Jimmy Dean pork sausage; cooked, crumbled and drained
- 10 eggs, lightly beaten
- 3 c. of milk
- 2 tsp. dry mustard
- 8 oz. (2 c.) shredded sharp cheddar cheese
- 6 c. cubed bread
- 1/2 tsp. black pepper
- 1 tsp. salt
- 1/2 c. mushrooms, sliced
- 1 medium tomato, chopped
- 1/2 c. green onions, sliced
Toll House Pie

Beat eggs on high speed of mixer for 3 minutes
- 2 eggs, room temperature
- 2/3 c. flour
- 1/2 c. sugar
- 1/2 c. brown sugar
- 3/4 c. (1 1/2 sticks) butter, softened
- 1 c. walnuts (1/4-inch pieces)
- 6 oz. Nestle chocolate chips
- baked 9-inch pie shell
Chocolate-Amaretto Cheesecake

Sprinkle chocolate wafer crumbs in bottom of a 7 inch springform pan
- 6 chocolate wafers, finely crushed
- 1 1/2 c. light process cream cheese product
- 1 c. sugar
- 1 c. 1 percent low-fat cottage cheese
- 1/4 c. plus 2 tbsp. unsweetened cocoa
- 1/4 c. all-purpose flour
- 1/4 c. amaretto
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1 egg
- 2 tbsp. semisweet chocolate mini-morsels
- chocolate curls (optional)
Pumpkin Pecan Loaves

In a bowl, combine the first six ingredients
- Caramel Glaze:
- 3-1/3 c. all-purpose flour
- 3 c. sugar
- 2 tsp. baking soda
- 1-1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 can (15 oz.) solid-pack pumpkin
- 1 c. vegetable oil
- 4 eggs, lightly beaten
- 2/3 c. water
- 1/2 c. chopped pecans

- 1/4 c. sugar
- 1/4 c. packed brown sugar
- 1 1/4 c. whipping cream

Williamsburg Orange Cake

Heat oven to 350 degrees. Grease and flour oblong pan 13x9x2 inches, or two 9 inch or three 8-inch round layer pans
- Frosting:
- 2 1/2 c. all-purpose flour or 2 3/4 c. cake flour
- 1 1/2 c. sugar
- 1 1/2 tsp. baking soda
- 3/4 tsp. salt
- 1 1/2 c. buttermilk
- 1/2 c. margarine or butter, softened
- 1/4 c. shortening
- 3 eggs
- 1 1/2 tsp. vanilla
- 1 c. golden raisins, cut up
- 1/2 c. finely chopped nuts
- 1 tbsp. grated orange peel
- 1 1/2 c. margarine or butter, softened
- 4 1/2 c. powdered sugar
- 4 to 5 tbsp. orange-flavored liqueur or orange juice
- 1 tbsp. grated orange peel
Broccoli Quiche

Heat oven to 425 degrees F
- Filling:
- 1 (15-oz.) pkg. Pillsbury refrigerated pie crusts
- 4 eggs, slightly beaten
- 1 c. half-and-half or milk
- 1/2 tbsp. finely chopped onion
- 1/2 tsp. salt
- 1/4 tsp. pepper
- dash thyme leaves
- 2 c. Green Giant frozen broccoli cuts, thawed
- 3 oz. (3/4 c.) shredded cheddar cheese
- 3 oz. (3/4 c.) shredded Monterey jack cheese
Mocha Rum Cheesecake

- Filling:
- 1/4 c. rum
- 1 tbsp. instant coffee crystals
- 1 1/2 lb. cream cheese, softened
- 1 c. sugar
- 4 oz. semi-sweet chocolate, melted and cooled
- 2 tbsp. flour
- 1 tsp. vanilla
- 3 eggs
- Crust:
- 1 l/2 c. oatmeal cookie crumbs (can substitute chocolate cookie)
- 1/4 c. butter or margarine melted
Chili Corn Bread Salad

- 1 pkg. (8-1/2 oz.) corn bread/muffin mix
- 1 can (4 oz.) chopped green chilies, undrained
- 1/8 tsp. ground cumin
- 1/8 tsp. dried oregano pinch rubbed sage
- 1 c. mayonnaise
- 1 c. (8 oz.) sour cream
- 1 envelope ranch salad dressing mix
- 2 cans (15 oz. each) pinto beans, rinsed and drained
- 2 cans (15-1/4 oz. each) whole kernel corn, drained
- 3 medium tomatoes, chopped
- 1 c. chopped green pepper
- 1 c. chopped green onions
- 10 bacon strips, cooked and crumbled
