Pre-heat the oven to 350 degrees
- Cookie crust:
- 2 1/2 c. flour
- 1 c. cold butter or margarine (cut into pieces)
- 1/2 c. sugar
- 1/2 tsp. salt
- Filling:
- 4 eggs
- 1 1/2 c. light or dark karo syrup
- 1 1/2 c. sugar
- 3 tbsp. butter or margarine, melted
- 1 1/2 tsp. vanilla
- 2 1/2 c. pecan halves or coarsely chopped pecans
Pumpkin Chiffon Coconut Crust Pie

Crust: beat butter and sugar
- Filling:
- 1 envelope unflavored gelatin
- 1 1/4 c. mashed pumpkin
- 3/4 c. evaporated milk
- 1/4 c. water
- 2 egg yolks slightly beaten
- 3/4 c. brown sugar
- 1/2 tsp. salt
- 1/4 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 3 egg whites (1 from crust)

- 1/3 c. butter
- 3 tbsp. sugar
- 1 egg yolk
- 1 c. shredded coconut
- 1 c. flour
Bow Tie Chicken

Sauté bacon until completely cooked
- 1 (8 oz.) pkg. Inn Maid bowtie pasta
- 1 1/2 lb. boneless/skinless chicken breasts
- 1/2 lb. peppered bacon
- 1 c. sliced onions
- 1 c. sliced mushrooms
- 3 tbsp. olive oil
- 1 tbsp. minced garlic
- 1/2 tsp. pepper
- salt to taste
- 2 tbsp. flour
- 1 (14 1/2 oz.) can chicken stock
- 1 (6 oz.) bag of fresh baby spinach
- 1 (10 oz.) pkg. frozen corn
- 1 (16 oz.) pkg. sour cream
- 1/2 c. sliced green onions
- 1 (5 oz.) pkg. croutons, crashed
Sausage And Mushroom Calzone

Cook sausage and mushrooms in large skillet until no longer pink; drain
- 12 oz. sweet Italian sausage
- 1 c. sliced fresh mushrooms
- 1 can (13 oz.) Contadina pizza sauce
- 1 loaf (16 oz.) frozen bread dough thawed
- 1 1/2 c. (6 oz.) shredded mozzarella cheese
- 1 tbsp. grated Parmesan cheese
Monte Cristo Sandwich

For each sandwich use 3 slices of bread
- 18 slices bread
- butter
- 6 slices ham
- 6 slices Turkey or chicken
- 12 slices Swiss or Gruyere cheese
- 8 little mustard and mayonnaise, if desired
- 3 eggs

- 1/8 teaspoon salt

- Amaretto frosting:
- 2/3 c. blanched almonds, toasted
- 1 8 oz. semisweet chocolate
- 1/3 c. margarine or butter
- 1 1/4 c. all-purpose flour
- 1 c. sugar
- 2 tbsp. amaretto
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 2 c. powdered sugar
- 3 tbsp. margarine or butter softened
- 1 tbsp. amaretto
- 1 to 2 tbsp. milk

- 2 c. finely crushed pretzels
- 1/2 c. sugar, divided
- 2/3 c. butter or margarine, melted
- 12 oz. (1-1/2 (8-oz.) pkg.) Philadelphia cream cheese, softened

- 1 c. thawed cool whip whipped topping
- 2 c. boiling water

- 10 oz. frozen chopped spinach, cooked, drained
- 2 1/2 oz. 2 percent sharp cheddar cheese slices, such as Kraft (3 1/2 slices), torn into strips
- 3/4 c. skim milk
- 1 egg, beaten
- 3 slices bread, toasted & cubed
- 2 tbsp. light (5 grams fat pet tbsp.) margarine
- 1 clove garlic, minced
- 2 tbsp. water
- 2 tbsp. grated Parmesan cheese
Speedy Black Bean Soup

Heat the oil in a 4 1/2-quart Dutch oven or soup pot over medium-high heat
- 1 tsp. olive oil
- 1 medium onion (or about 1/2 c. chopped)
- 2 (15-oz.) cans black beans
- 1 (14 1/2 oz.) can fat-free chicken broth
- 1 c. frozen corn kernels
- 1 (14 1/2 oz.) can Mexican style stewed tomatoes, or diced tomatoes seasoned with jalapeno peppers
- 3 bay leaves
- 1 tsp. bottled minced garlic
- 1 tsp. dried thyme
- 1 tsp. balsamic vinegar
- 1/2 tsp. ground cumin
- reduced fat sour cream, optional topping
- already-shredded cheddar cheese, optional topping
Apple Dijon Pork Roast
