Chicken Lo Mein

Before you begin, prepare the meat and vegetables for stir frying
- 1/2 head green cabbage
- 1 medium yellow onion
- 2 medium carrots
- 1 small crown broccoli
- 2 inches fresh ginger
- 1 large chicken breast
- 2 Tbsp peanut oil
- 2 (3 oz.) packages Ramen noodles (no flavor packet)
- 1 tsp sesame oil (optional)
- 1/4 cup soy sauce
- 1/4 cup Worcestershire sauce
- 2 Tbsp ketchup
- (up to) 1 Tbsp hot sauce (Optional)
- 1 Tbsp sugar
Salmon Croquettes

I put several recipes together and played around with the best combination for salmon croquettes
- 4 (5-ounce) packages salmon
- 1/2 tablespoon seafood seasoning, like Old Bay
- 4 chopped green onions
- 1/2 chopped red bell pepper
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 eggs
- 1/4 cup Panko bread crumbs, plain
- 1/4 cup reduced fat Helmann's Mayonnaise
- 2 teaspoons Creole mustard
- Dash of lemon juice
Red Potato and Smoked Sausage Bake

-Place a large, deep, non-stick pan (or even medium non-stick pot) over medium-high heat, and add in about 1 tables...
- Olive oil
- 2 pounds smoked sausage, sliced on the bias into thin medallions
- 2 tablespoons butter
- 2 onions, quartered and thinly sliced
- 1 garlic clove, pressed through garlic press
- Salt
- 3/4 teaspoon freshly cracked black pepper
- 1 1/2 teaspoons paprika
- 10 medium-size red skin potatoes, peeled and sliced into 1/2” thick circles (about 2 3/4 lbs)
- 1 1/2 cup chicken stock
- 1 tablespoon chopped flat-leaf parsley
Shrimp Paprika

- 1 lb raw, peeled, deveined shrimp
- 2 Tbls margarine or butter
- 3/4 tsp salt
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/8 tsp black pepper
- 1/4 cup chopped green onion tops
- 1/3 cup heavy cream or half and half
- 1 1/2 tsp Dijon mustard
- 2/3 cup sour cream
- 2 cups rice (cooked)
- Parsley for garnish

- In top of double boiler melt:
- 1 stick of butter
- 3 squares unsweetened baking chocolate
- Meanwhile:
- Beat until light - 4 eggs
- add 3 Tblsp Karo white corn syrup
- 1 1/2 cups sugar
- 1 teasp vanilla

Almond-Crusted Baked Fish Over Broiled Tomatoes With Hollandaise Sauce

1. Rinse the fish fillets and pat them dry
- For the tomatoes:
- 3 to 4 large, ripe tomatoes
- 1/4 cup olive oil
- 1/2 tsp. kosher salt
- 1/4 tsp. ground black pepper
- 1 . Line a baking sheet with aluminum foil and slice the tomatoes into 1/2-inch slices.
- 2 . Place the tomato slices on the baking sheet and brush them with the olive oil. Sprinkle the tomatoes with salt and pepper and place under the boiler for 3 to 4 minutes.
- 3 . Remove the broiled tomatoes and set them aside until serving time.
- For the fish:
- 6 (4- to 5-oz.) fish fillets
- 1 ⁄3 cup finely chopped slivered almonds
- 1 cup plain panko bread crumbs
- 2 tbls. melted butter
- 1 tsp. lemon zest
- 1 tbl. lemon juice
- 1/2 tsp salt
- 1/4 tsp. fresh ground black pepper
- Hollandaise Sauce

- Preheat oven to 300 degrees
- 1 box Duncan Hines Butter Recipe Cake mix
- 4 eggs
- 8 oz. sour cream
- 1/2 cup oil
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/2 cup sugar
Quick and Easy Hushpuppies

Combine cornmeal, flour, sugar, egg, onion, pepper and milk
- 1 cup self-rising cormeal
- 1/2 cup self-rising flour
- 1 Tbsp sugar
- 1 egg
- 1 medium onion, finely chopped
- 1/2 bell pepper, chopped (or 1 jalapeno pepper)
- 1 cup milk
- peanut oil
Crawfish Fettuccine

- 3 onions, chopped
- 2 bell peppers
- 1/4 cup flour
- 3 cloves garlic minced
- 1 pint & 1 cup half & half
- 1 lb. Velveeta cheese with jalapenos
- (or add 2 Tbsp jalapenos to plain Velveeta)
- 1 lb. fettuccine noodles, cooked
- 3 stalks celery, chopped
- 2 sticks butter
- 4 tsp parsley flakes
- 3 lbs crawfish
- 1 can Parmesan cheese, grated
- salt & pepper to taste
- (I add a drained can of Rotel for color)
