- 2 cloves garlic, finely chopped

- 2 teaspoon Tony Chachere's seasoning
- 1 (8 ounce) package cream cheese
- Small diameter French bread loaves, slice thinly and toasted with butter
Cajun Shrimp Casserole

Peel shrimp; devein, if desired
- 2 pounds unpeeled, large fresh shrimp
- 1/4 cup butter
- 1 small red onion, chopped*
- 1/2 cup chopped red bell pepper*
- 1/2 cup chopped yellow bell pepper*
- 1/2 cup chopped green bell pepper*
- 4 garlic cloves, minced
- 2 cups fresh or frozen sliced okra
- 1 tablespoon lemon juice
- 1 1/2 teaspoons salt
- 1 (10 3/4-ounce) can cream of shrimp soup**
- 1/2 cup dry white wine
- 1 tablespoon soy sauce
- 1/2 teaspoon cayenne pepper
- 3 cups cooked long-grain rice
- 1/4 cup grated Parmesan cheese
- Garnishes: quartered lemon slices, fresh flat-leaf parsley sprigs
Shrimp Alfredo

This can also be done with chicken
- Large package of sliced fresh mushrooms
- 2 tablespoons olive oil
- 3 tablespoons butter
- 1/4 cup green onions, chopped
- 2 pounds peeled fresh gulf shrimp
- 4 or 5 cloves fresh garlic, minced
- 2 tablespoons flour
- 1/2 cup milk
- 2 cups heavy whipping cream
- 1 cup Romano/Parmesan grated cheese
- Salt and pepper to taste
- Package of your favorite pasta (mine is angel hair)
Remoulade Sauce-Emeril's

Combine all ingredients in the bowl of a food processor and process for 30 seconds
- 1/4 cup fresh lemon juice
- 3/4 cup vegetable oil
- 1/2 cup chopped onion
- 1/2 cup chopped green onions
- 1/4 cup chopped celery
- 2 tablespoons chopped garlic
- 2 tablespoons prepared horseradish
- 3 tablespoons Creole whole-grain mustard
- 3 tablespoons prepared yellow mustard
- 3 tablespoons ketchup
- 3 tablespoons chopped parsley leves
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon freshly ground black pepper

- 2 cans of shrimp
- 8 oz sour4 cream
- 1 pkg Good Seasonings Italian Salad Mix
- 8 oz cream cheese
- dash Worcestershire Sauce
- dash Tabasco
- Dash lemon juice
Chicken Pasta Cajun Style

Bring a large pot of lightly salted water to a boil
- 4 ounces linguine pasta
- 2 skinless, boneless chicken breast halves
- 2 teaspoons Cajun seasoning
- 2 tablespoons butter
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 4 fresh mushrooms, sliced
- 1 green onion, chopped
- 1 cup heavy cream
- 1/4 teaspoon dried basil
- 1/4 teaspoon lemon pepper
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ground black pepper
- 1/4 cup grated Parmesan cheese
Ratatouille

Place a single layer of paper towels on 2 large plates
- 2 1 lb. eggplants, cut into cubes
- 1 3/4 teaspoons plus 3/4 teaspoon salt, divided
- 2 1/2 lbs. peeled tomatoes or 1, 28-oz can plus
- 1 , 14-oz can petite-diced tomatoes
- 5 cloves garlic, crushed and chopped
- 1/2 teaspoon ground black pepper
- 1/3 cup loosely packed, chopped fresh basil
- 3/4 cup loosely packed, chopped flat-leaf parsley
- 1 1/2 lbs. white onions, thinly sliced
- 3 red or yellow bell peppers, cored, seeded, and
- chopped
- 2 lbs. zucchini, cut lengthwise and then into 1/2-inch
- slices
- 1/3 cup dry white wine (Sauvignon Blanc)
Oatmeal Cookies

Preheat oven to 350. Cream butter and sugars, add eggs and vanilla
- 1 cup butter
- 1 cup firmly packed brown sugar
- 1 cup white sugar
- 2 eggs, well beaten
- 1 tsp vanilla
- 1 1/2 cups all purpose flour
- 1 tsp salt
- 1 tsp soda
- 3 cups quick cooking oatmeal, uncooked
- 1/2 cup chopped pecans
Apple Butter

- 1/3 cup water
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp All Spice
