Potato Crusted Chicken Pot Pie

Directions: Preheat oven to 350 degrees
- 1 can halved green beans, drained
- 1 can sliced carrots, drained
- 1 rotisserie chicken, white and dark meat pulled off the bone and shredded
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1/2 teaspoon each salt and pepper
- 4 large potatoes, peeled and cubed
- 1/4 cup heavy whipping cream
- 1/4 cup melted butter
- 1/2 teaspoon salt
Mexicali Casserole

- 1 lb ground beef (or turkey)

- 1 pkg. Mexican cornbread mix

- 3/4 cup all purpose flour
- 3/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 8 tablespoons (1 stick) unsalted butter, melted
- 3/4 cup packed brown sugar
- 1/4 cup plus 1 tablespoon grade B maple syrup
- 3/4 teaspoon vanilla extract

- 1 box yellow cake mix
- 1 small can pumpkin puree
- 1 - 14 oz. can sweetened condensed milk
- 1 - 8 oz. tub cool whip
- 1/2 bag Heath Bits
Chocolate Eclair Icing

- Mix 1/3 cup cocoa, 1 cup sugar in sauce pan. Add 1 teasp vanilla, 1 stick butter, 1/4 cup milk. Boil for 1 minute, then set aside to cool.

- 3 cups mini pretzels
- 1/2 cup craisins
- 1 cup salted dry roasted peanuts

Pumpkin Whoopie Pies

Cookies: In a large bowl, beat pumpkin and butter until smooth
- Cake Part:
- 1/2 can of pumpkin
- 1/3 C softened unsalted butter
- 2 eggs
- 1 package spice cake mix
- 1/2 C milk
- Parchment paper for lining the baking sheet
- Middle Filling:
- 1/2 C softened unsalted butter (you could get away with using less if you must)
- 8oz package cream cheese, softened
- 2 cups sifted powdered sugar
- 1/2 of a 7oz jar marsmallow creme (you can use fluff if you don't have creme. Just 'melt' it in the microwave for a few seconds first to thicken it)
- 1/4 tsp vanilla
- 1/2 tsp ground cinnamon
- 1/2 tsp nutmeg
Bacon Wrapped Pork Tenderloin

Combine garlic powder, seasoned salt, basil, oregano, and black pepper; rub seasoning all over the pork tenderloin
- 1 pork tenderloin, cleaned and trimmed
- 3 slices of bacon
- 1 tablespoon of garlic powder
- 1 teaspoon of Lawry's Seasoned Salt
- 1 teaspoon dried crumbled leaf basil
- 1/2 teaspoon dried crumbled leaf oregano
- 1 teaspoon black pepper
