Chili-Lime Butter

Place on stick of butter in bowl to soften
- Zest of 1 lime
- 1 T lime juice
- 1 tsp. chili powder
- 1/2 tsp. salt
- 1/2 tsp. cayenne pepper
Sweet 'n' Spicy Empanadas

Heat oven to 350 degrees. In skillet cook first 3 ingredients
- 1/2 lb. Italian chicken sausage (crumbled)
- 1/2 c. chopped onion
- 1 jalapeno pepper (minced and seeded)
- 3 T minced green olives
- 3 T parsley
- 3 T raisins
- 1 14 oz. refrigerated pie crust
- 1 egg (lightly beaten)

- 1 1/2 c potatoes
- 1/2 c sauerkraut (chopped)
- 1/8 tsp. pepper

Easy Chicken Teriyaki Kabobs

Combine 1/2 c teriyaki sauce, 2 T pineapple juice and oil
- 2 lbs. chicken cut into cubes
- 1/2 c Teriyaki sauce or marinade
- 2 T oil
- 1 can pineapple chunks (reserve 2 T juice)
- 1 basket cherry tomatoes
- 2 red or green bell peppers (cut into 1 inch pieces)
Crock Pot Bean & Vegetable Burritos

Combine chili powder, oregano, and cumin in small bowl
- 2 T chili powder
- 2 tsp. oregano leaves
- 1 1/2 tsp. cumin
- 1 large sweet potato (peeled & diced)
- 1 15 oz. can black beans (drained & rinsed)
- 4 garlic cloves (minced)
- 1 medium onion
- 1 can Rotel Mexican with lime juice
- 1 c. frozen corn (thawed & drained)
- 3 T lime juice
- 1 T chopped cilantro
- 3/4 c. shredded Monterey Jack cheese
- 4 10 inch tortillas
- Sour cream (optional)
Better Than "Reeses" Peanut Butter Cups

Have ready a 9x13 pan. Mix sugar, crackers, peanut butter and butter in medium bowl until well blended
- 2 c. powdered sugar
- 2 c graham cracker crumbs
- 1 c. smooth peanut butter
- 1/2 c + 2 T melted butter
- 2 c. milk chocolate or semi=sweet chocolate chips (melted)
Cheese Ball

Mix well, form into ball and chill
- 11 oz. cream cheese ( let set at room temperature 24 hrs.)
- 1 c. cheddar cheese
- 1 T pepper
- 1 T red pimento
- 1 tsp. onion
- 2 tsp. worcestershire sauce
- 1 tsp. lemon juice
Cheddar Scallion Cornbread

- 1 pkg. cornbread mix
- 1 c shredded cheddar cheese
- 1/2 c minced scallions
- 1/2 tsp. ground black pepper
- 1/2 tsp. garlic salt
Easy Crock Pot Potato Soup

Put the potatoes in the crockpot
- Ingredients:
- 1 30oz. bag of frozen diced hash browns
- 1 32 oz box of chicken broth
- 1 can of cream of chicken soup (10 oz)
- 1 pkg. cream cheese (8 oz, not fat free)
- 3 oz bacon bits
- 1 cup shredded cheddar cheese
- salt and pepper to taste
Rustic Reuben Salad

Combine greens, tomato and croutons in large bowl
- 8 c. salad greens
- 1 tomato
- 1 c. croutons
- 1/2 lb. corned beef (Cut into strips)
- 3/4 c. Swiss cheese (cubed)
- 1/4 c. sauerkraut (well drained)
- 1/4 c. Thousand Island Dressing
