LOADED CAULIFLOWER

Preheat oven to 425° In a large pot boil water and cook Cauliflower for 8 - 10 minutes, drain and let cool
- 1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
- 6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins)
- 6 Tbs chopped Chives
- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream
- 2 cups Colby Jack Cheese ( may use cheddar)
- 8 oz container sliced mushrooms (I don't use mushrooms in mine)(optional)
Zucchini Chips

Cut a zucchini into thin slices and toss in 1 Tbsp olive oil, sea salt, and pepper
- zucchini
- 1 T olive oil
- salt and pepper
Fresh Peach Salsa

Whisk lime juice, oil and salt until well blended
- Juice of 1 lime
- 1/4 c. oil
- 1/2 tsp. salt
- 1 large peach (peeled and diced)
- 1 tomatillo (husked and diced)
- 1/3 c. diced red pepper
- 1 T diced red onion
- 1 jalapeno pepper (seeded and minced)
- 2 T minced fresh cilantro
Pumpkin Dip

Beat cream cheese and powdered sugar together
- 1 8 oz. cream cheese (softened)
- 2 c. powdered sugar
- 1 15 oz. can pumpkin
- 3 tsp. pumpkin spice
- 1 tsp. vanilla
- 1/2 tsp. ground ginger
Chinese Pepper Steak

Mix together soy sauce, bouillon cube, ginger, garlic powder and 1 c
- 1 2 lb. round steak (cut in strips)
- 1/4 c. soy sauce
- 1 beef bouillon cube
- 1/2 tsp. ginger
- 1/2 tsp. garlic powder
- 2 T oil
- 3 large green peppers
- 3 T corn starch
- 4 c. cooked rice
Crock-Pot Chicken and Noodles

Cook chicken, soup, butter, and broth in crock-pot on low for 6-7 hours
- 4 boneless skinless chicken breasts (I used frozen)
- 2 cans cream of chicken soup
- 1 stick of butter
- 2 15 oz cans chicken broth
- 24 oz. frozen egg noodles
Mu-Shu Pork

To make pancakes, combine flour, salt and add 3/4 cup boiling water and stir until mixture comes together in a ball
- Pancakes:
- 1 1/2 c flour
- 1/4 tsp. salt
- 1 T oil
- Pork:
- 3 T soy sauce
- 1 T dry sherry
- 2 tsp. cornstarch
- 1 carrot
- 1/2 lb. mushrooms
- 1 scallion
- 1 garlic clove
- 2 c shredded bok choy
- 3/4 lb. pork tenderloin
- 2 eggs
- salt
- 1/4 c. oil
- 1 tsp. ginger
- Hoisin sauce
Slow Cooker Pork Tenderloin

Mix together and pour over the Tenderloin in the crock pot, cook on LOW for 6 hours
- Sauce: Soy Sauce, Mustard, Maple Syrup, Olive Oil, Onions, and Garlic Salt.
Ham and Potato Scramble

In medium bowl, combine eggs, milk, garlic salt, and pepper
- 8 eggs
- 1/4 c. milk
- 1/4 tsp. garlic salt
- 1/4 tsp. black pepper
- 1/4 thinly sliced green onion
- 1 T butter
- 1 c. shredded hash browns
- 1/2 c. diced cook ham
- 1/3 c. shredded Cheddar cheese
