Beverages - Punch to serve 35

Blend together well. Makes 1 ½ gallons without the ginger ale
- 2 - 46 oz cans pineapple juice
- 2 cups sugar
- 2 - 46 oz cans water
- 2 quarters of giner ale
- 1 small bottle of almond flavoring
- medium size bottle (16 oz) Real Lemon Juice
Chicken - Lemon Pepper Chicken

In shallow dish or plastic bag, combine all ingredients except chicken
- 2/3 cup Real Lemon Lemon Juice from concentrate
- 6 tablespoons water
- 2 teasp chicken flavored Instant bouillon
- 2 cloves garlic, finely chopped
- 1 teasp pepper
- 2 to 3 lbs. Chicken pieces
Beverages - Citrus Blush

Mix first three ingredients and chill
- 1 bottle cranberry juice
- 1 can pineapple juice
- 1 – 12 oz can frozen orange juice
- 1 – 2 liter bottle of ginger ale

Mix all of above ingredients together well
- 1 lb. Ground sirloin
- 1 tablespoon Worcestershire Sauce
- 1 tablespoon A-1 Steak Sauce
- 1/2 teaspon garlic powder
- 1/2 teaspoon onion powder

Heat lightly greased 8 inch cast-iron skillet in a 400 degree oven for 5 minutes
- 1 cup self-rising cornmeal
- 1 (8 3/4 oz) can cream-style corn
- 1 – 8 oz carton sour cream
- 3 large eggs, lightly beaten
- 1/4 cup vegetable oil
Jambalaya Supreme

Chop smoked sausage into circles or semi circles
- 2 deboned chickens, cut up
- 1 onion, chopped
- 4 tablespoons butter
- 1 large can of tomato sauce
- 1 small can Hunts Garlic Tomato Paste
- 1 green pepper, diced in small bits
- 3 to 4 cups cooked rice (white or wild rice)
- 2 lbs of smoked sausage
- 1 1/2 lbs. Shrimp (optional)
- 1 lb. Smoked ham (optional)
- 2 teaspoons of thyme
- 1/4 cup water
- Seasoned salt, black pepper, cayenne pepper (minimum of 2 teaspoons-that’s what we used)
Chicken - Creamy Chicken and Broccoli Casserole

Heat oven to 400 degrees. Combine first 5 ingredients in 9x13 inch baking dish; cover
- 1 1/2 lb. bonelessw, skinless chicken breasts, cut into bite-sized pieces
- 1 package (14 oz) frozen broccoli florets, thawed, drained
- 1 1/2 ups Kraft 2% Milk Shredded Sharp Cheddar Cheese
- 1 tub (10 oz) Philadelphia Savolry Garlic Cooking Creme
- 1/2 cup milk
- 24 Ritz crackers, crushed (about 1 cup)
- 1 tablespoon butter, melted.

Mix together flour, baking soda, and cinnamon
- Makes 4 dozen cookies
PECAN-CHEESE CRISPIES

Combine cheese and butter in large mixing bowl; beat at medium speed with an electric mixer until blended
- 2 cups (8 oz) shredded sharp cheddar cheese
- 1 cup butter or margarine, softened
- 1/4 teaspoon hot sauce
- 1/2 teaspoon dry mustard
- 2 cups all-purpose flour (plain)
- 1 cup self-rising flour
- 2 cups crispy rice cereal
- pecan halves
Breads & Rolls - Cornbread Dressing

Mix all together until smooth (not too soupy or thick)
- To this add:
- I use the Southern Living Cornbread Recipe in this cookbook. Make 1 or 2 skillets depending on number of people feeding.
- After cornbread is cooked, crumble in small pieces into a large mixing bowl. Toast approximately 5 or 6 pieces of toast and crumble into cornbread mixture.
- 1 large onion, finely chopped
- Approximately 5 or 6 stalks of celery, finely chopped
- 6 eggs, beaten
- salt and pepper to taste
- broth from boiled hen or roasted turkey-can use Swanson’s Chicken broth also
