- 3/4 cup milk
- 2/3 cup seasoned bread crumbs
- 2 teaspoons dried minced onion
- 1 teaspoon salt
- 1/2 teaspoon rubbed sage
- 1/2 cup sliced fresh mushrooms
- 1 1/2 pounds ground beef
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon ground mustard
- 1/2 teaspoon Worcestershire sauce

Finely chop together garlic, ginger, and scallions
- 1/2 cup chopped garlic (from 12 cloves)
- 3 tablespoons chopped peeled fresh ginger (from a 3-inch piece)

- 1 teaspoon fish sauce, such as nam pla
