Broccoli Salad with Sunflower Seeds & Cranberries

1.To a salad bowl, add broccoli, bacon, onion, seeds, and cranberries
- 2-3 broccoli crowns, just the florets, finely chopped (5-6 cups)
- 10 bacon slices, crisp-cooked and crumbled
- 1/3 c red onion, diced
- 1/3 c sunflower seeds
- 1/3 c dried cranberries, chopped (golden raisins are equally good)
- 1/2 c mayonnaise
- 2 T apple cider vinegar
- 2 t sugar
- salt and pepper
Berry Jam

Add lemon juice to berries
- 4 c crushed berries or juiced
- 1/4 c lemon juice
- 7 TBS clear jel
- Sugar to taste (approx. 1 1/2 cups)
Homemade Pizza Sauce

Blend all ingredients in a blender or food processor (we use and HIGHLY recommend a Vitamix) and it’s ready to us...
- 1 quart (32 oz.) canned or fresh tomatoes
- 6 oz. can tomato paste
- 1 tsp kosher salt
- 15 cranks fresh ground pepper (about a tsp)
- 1 clove garlic
- 1 Tbsp olive oil
- basil, thyme, oregano (to taste)
Chocolate Chip Oatmeal Cookies

1) Preheat the oven to 325°F
- 1 cup (16 tablespoons) unsalted butter, at room temperature
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1 large egg, at room temperature
- 1 large egg yolk, at room temperature
- 1 tablespoon vanilla extract
- 2 cups King Arthur Unbleached All-Purpose Flour
- 1 cup quick-cooking or old-fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda

Honey Buttermilk Bread Recipe

1.Mix the ginger, sugar,yeast, and water and set aside for five minutes
- 1 envelope yeast
- 1 teaspoon sugar
- 1/4 cup warm water
- pinch of ginger (helps activate the yeast)
- 2 cups warm buttermilk
- 1/3 cup honey
- 1/4 cup butter, melted and cooled so that it is warm to the touch but not hot.
- 1 teaspoon salt
- 3/4 teaspoon baking soda
- 6 cups white bread flour
Butternut Squash Soup

In a large stock pot combine broth, squash, onion and apple: cover pot and bring to a boil over high heat
- 4 cup vegetable broth
- 12 oz uncooked butternut squash, peeled and cubed
- 1/2 large uncooked sweet onion cut into 2" cubes
- 1/2 samll fresh apple peeled and cut into 2" cubes
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/8 tsp nutmeg

1. Cook fettuccine according to package directions
- 6 ounces uncooked fettuccine
- 1 pound boneless skinless chicken breasts, cut into thin strips
- 3 teaspoons olive oil, divided
- 1/2 cup fresh broccoli florets
- 1/2 cup sliced fresh mushrooms
- 1/2 cup cherry tomatoes, halved
- 2 garlic cloves, minced
- 1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and halved
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 2 teaspoons all-purpose flour
- 1/4 cup reduced-sodium chicken broth
- 1/3 cup white wine or additional reduced-sodium chicken broth
- 1 tablespoon minced fresh parsley
- 1 tablespoon shredded Parmesan cheese
Quick Homemade Sausage and Lentil Soup

Combine sausage ingredients in a bowl and let stand 15 minutes
- For the Sausage:
- 1 pound ground pork
- Salt and pepper
- 2 tablespoons red wine vinegar (a splash)
- 2 cloves garlic, minced
- 1 teaspoon fresh chili flakes, crushed
- 1 teaspoon fennel seed, ground fennel or fennel pollen
- 1 teaspoon granulated onion, 1/3 palmful
- A few grates of nutmeg
- 2 tablespoons minced fresh parsley
- For the Lentils:
- 1 cup lentils
- 2 fresh bay leaves
- 1 small onion, left whole
- For the Soup Base:
- 3 tablespoons olive oil
- 2 carrots, chopped
- 1 onion, chopped
- 2 celery ribs, chopped
- 1 bunch parsley, stems chopped
- 2 to 3 sprigs rosemary, chopped
- 1 potato, peeled and chopped
- 1 quart veal stock or beef stock
- Grated Pecorino and finely chopped parsley tops, to finish
