This is the dish I created for The Next Iron Chef at the ambassador's residence in Paris
- FOR THE SAUCE:
- 1 cup Creole cream cheese or fromage blanc
- 1/3 cup heavy cream
- seeds from half a vanilla bean
- 3 tablespoons sugar
- FOR THE BISCUITS:
- 2 cups all-purpose flour, plus more for dusting
- 1/4 cup sugar
- 2 tablespoons baking powder
- 1 pinch salt
- zest of 1 lemon
- 6 tablespoons cold butter, diced
- 3/4 cup whole milk
- FOR THE BERRIES:
- 2 pints strawberries, hulled and diced
- 2 tablespoons Grand Marnier
- leaves from i sprig fresh mint, minced
- 2 cups watermelon-strawberry sorbet
- powdered sugar

- 8 ounces bacon, chopped
- 4 pounds beef stew meat (preferably chuck)
- Salt and pepper
- 1 large onion, chopped fine
- 2 carrots, peeled and chopped fine
- 8 garlic cloves, minced
- 2 teaspoons chopped fresh thyme leaves
- 4 tablespoons tomato paste
- 2 1/2 cups Pinot Noir
- 1 1/2 cups low-sodium chicken broth
- 1/3 cup soy sauce
- 3 bay leaves
- 3 tablespoons Minute Tapioca
- 3 tablespoons minced fresh parsley leaves
Basil Vinaigrette - ATK

Pulse vinegar, basil, chives, garlic, sugar, salt, and pepper in jar of blender until roughly chopped
- 2 tablespoons champagne vinegar
- 1 cup packed fresh basil leaves
- 3 tablespoons minced fresh chives
- 2 medium garlic cloves, minced or pressed through garlic press (about 2 teaspoons)
- 2 teaspoons sugar
- 1 teaspoon table salt
- 1/2 teaspoon ground black pepper
