Grilled Sausages with Onions

This recipe will work with any raw, uncooked sausage
- 2 large onions, halved and cut pole to pole into 1/4-inch-thick slices
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon table salt
- 1/4 teaspoon ground black pepper
- 13 - by 9-inch disposable aluminum roasting pan
- 2 pounds hot or sweet Italian sausages (8 to 12 links) (see note)
Quick Brioche Loaf

1. In small bowl, whisk yeast into milk, then stir in 1 cup of flour
- 1 envelope dry active yeast (about 2 1/2 teaspoons)
- 1/2 cup whole milk, warm (about 110 degrees)
- 2 1/4 cups unbleached all-purpose flour
- 6 tablespoons unsalted butter, cut into 6 pieces
- 3 tablespoons granulated sugar

Canned lentils can be used, though some flavor will be sacrificed
- 3/4 cup dried brown lentils, rinsed and picked over
- 2 1/2 teaspoons table salt
- 3/4 cup bulgur
- 2 tablespoons vegetable oil
- 2 medium onions, chopped fine (2 cups)
- 1 rib celery (large), chopped fine (about 1/2 cup)
- 1 small leek, white and light green parts only, chopped fine (about 1/2 cup)
- 2 medium cloves garlic, minced or pressed through garlic press (2 teaspoons)
- 1 pound cremini mushrooms (or white), cleaned and sliced about 1/4 inch thick (about 6 1/2 cups)
- 1 cup raw unsalted cashew
- 1/3 cup mayonnaise
- 2 cups panko (Japanese bread crumbs)
- Ground black pepper
- 12 burger buns for serving

Preheat the oven to 300 degrees F using the convection setting
- 1 3/4 cups confectioners' sugar
- 1 cup almond flour
- 3 large egg whites, at room temperature
- 1/4 teaspoon cream of tartar
- Pinch of salt
- 1/4 cup superfine sugar
- 2 to 3 drops gel food coloring (see below)
- 1/2 teaspoon vanilla, almond or mint extract
