- 1/4 cup sugar
- 2 teaspoons baking soda

- 1-1/2 teaspoons baking powder
- 4 large eggs
- 4 cups buttermilk

- 1 1⁄2 - 2 pounds filet mignon, fat trimmed and cut into 1 1⁄4-inch cubes

- 1 ⁄4 cup white granulated sugar

- Salt and Pepper Dipping Sauce
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 ⁄4 cup of freshly squeezed lime juice
- 1 bunch watercress, washed

- 2 tablespoons butter
- 2 large green chiles, diced
- 2 jalapenos, finely diced
- 1 poblano chile, diced
- 2 onions, diced

- 2 cups grated sharp Cheddar
