- 2 cups all-purpose flour
- 1/3 cup sugar [I used an organic sugar with big, crunchy crystals, similar to demerara sugar]
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 stick (4 ounces) cold unsalted butter, or lard, cut into 8 pieces
- 2 large eggs, lightly beaten

- 2 tablespoons vegetable oil
- 6 medium garlic cloves, minced or pressed through garlic press (about 2 tablespoons)

- 2 teaspoons ground cumin
- 2 teaspoons chili powder

- 1 cup whole-milk ricotta cheese
- 1/4 cup extra-virgin olive oil
- 1/4 cup heavy cream
- 1 large egg yolk
- 4 medium garlic cloves, minced or pressed through garlic press (about 4 teaspoons)
- 1/2 teaspoon table salt
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon cayenne pepper
- 2 teaspoons minced fresh oregano leaves
