Cheddar Poblano Baked Chicken

Chicken breasts in a creamy cheddar poblano sauce, best baked in a covered casserole
- 4 chicken breasts - can use frozen or fresh
- 1 lg or 2 small poblano peppers (or bell), sliced lengthwise
- 1 sprig fresh basil
- 1 can Campbell's cheddar cheese soup
- 3 T half & half or milk
- 2 t chopped garlic
Easy Dr Pepper Cake

Turn oven to 350 degrees. Grease a bundt pan
- 1 box yellow cake mix
- 1 box instant vanilla pudding
- 4 eggs
- 3/4 cup oil
- 1 10 oz. can of Dr. Pepper
- 3/4 cups walnuts (Chopped)
- Glaze: 1 cup powdered sugar and 1 tsp vanilla and enough Dr. Pepper to make a thin glaze.
No-Drip Kool-aid Popsicles

Mix the dry Jell-o, Kool-Aid, and sugar
- 1 3 oz package Jell-o
- 1 pkg unsweetened Kool-aid
- 1/2 cup sugar
- 2 cups boiling water
- 2 cups cold water
Yummy Taco Casserole

Preheat oven to 375 degrees
- Toppings:
- 1 lb. ground beef
- 1 cup chopped onion
- 3/4 cup water
- 8 oz can tomato sauce
- 1/2 cup (4 oz can) diced green chiles
- 1 pkg taco seasoning mix
- 1 pkg (12 oz) taco shells, broken & divided
- 2 cups shredded mild cheddar cheese, divided
- chopped green onions, tomato, lettuce, sour cream, etc.
Spicy Shrimp Tostadas with Jalapeno Avocado Sauce

In a small bowl combine shrimp, paprika, cumin, chili powder and a pinch of salt & pepper
- 6 corn tortillas
- 18-20 large shrimp, peeled & deveined
- 3-4 tablespoons extra virgin olive oil, divided
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon hot chili powder
- juice of 1/2 a lime
- salt & pepper
- 1 scallion, chopped
- 1 tablespoon cilantro, chopped
- 1/2 cup red cabbage, shredded
- 1/2 cup baby arugula
- 1/2 avocado
- 1/4 cup plain greek yogurt
- 1 clove garlic
- 1 jalapeno, seeds removed
- juice of 1/2 a lime
- 1 tablespoon cilantro
