White Sauce - Helle Soße, Mennonite

Melt fat in heavy sauce pan or in top of double boiler
- 2 T butter
- 2 T flour
- 1 1/2 t salt
- 1 c milk
Creamy Avocado Yogurt Dip, Spread, or Dressing

To mix by hand: peel and cut avocado into chunks; drizzle with lime juice mash with fork; transfer to small bowl
- 1 avocado
- 1 tablespoon lime juice
- 1/2 cup lowfat Greek yogurt (for directions to make your own, go to: www.theyummylife.recipes/167)
- 1 teaspoon honey
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- 1-4 tablespoons milk or buttermilk (for thinning, if necessary)
- Optional additional ingredients: chives, green onions, cilantro, cumin, cayenne, or minced jalapeno
Lemon Basil Chicken with Vegetables

- 1 lg. Reynold's oven bag
- 1/4 c flour
- 1/4 c fresh lemon juice
- 2 T basil
- 2 T rosemary
- 2 t grated lemon peel
- 1/2 t seasoned salt
- 2 small red potatoes, quartered
- 2 t paprika
- 4-6 lb whole roasting chicken
- 1 sm yellow squash, cut in large pieces
- 1 sm zucchini, cut in large pieces
- 1 sm red bell pepper, cut in 8 pieces

- 1 pound boneless beef sirloin steak, 1/2 inch thick
- 3 tablespoons cornstarch
- 1 (10.5 ounce) can Campbell's Beef Consomme'
- 1/4 cup water
- 1 tablespoon soy sauce
- 1/4 teaspoon garlic powder
- 1 tablespoon oyster sauce
- 1/4 cup tomato sauce
- 1-2 teaspoons Kitchen Bouquet Browning & Seasoning sauce (optional, for color)
- 2 fresh green, yellow, orange or red pepper strips
- 1 shredded carrot
- 1 medium onion, cut into thin wedges
- 4 cups hot cooked regular long-grain white rice, cooked without salt (or Minute Rice Ready to Serve)
Salted Caramel Cocktail

- 1 oz. vodka
- 1 oz. Tuaca Italian vanilla liqueur
- 4 oz. cream
- 1 T. Salted caramel syrup
- Shake all ingredients with ice until cold, strain into martini glass.
- Dip rim of martini glass in caramel syrup, then dip in kosher salt.
- Can sprinkle cinnamon, brown sugar or nutmeg on top.

1. Cook your macaroni according to package directions
- 6 cups cooked elbow macaroni or rotini pasta
- 3/4 cup olives -sliced or chopped
- 3 dill pickles - chopped
- 3 sweet dill pickles - chopped
- 2 green onions - chopped (stems included)
- 1 cup sliced grape tomatoes or regular
- 1 cup cubed cheddar cheese
- 2 boiled eggs - chopped
- 1/2 cup mayonnaise
- 2 tablespoons red wine vinegar
- 1/4 to 1/2 cup buttermilk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons sugar
