Seafood Lasagna

In a large Skillet, saute onion in oil and 2 TBS butter until tender
- 1/4 cup chopped green onion
- 2 TBS + 1/2 cup Butter or Margarine
- 8 ox Clam Juice
- 1 lb raw peeled and cleaned small shrimp
- 1/4 TSN white pepper
- 1 1/2 cups milk
- 2 TBS Vegetable Oil
- 1/2 cup Chicken broth
- 1 pound scallops, cut up
- 8 oz Imitatinm crab meat, chopped
- 1/2 cup All-purpose flour
- 1/2 TSN salt
- 1 cup Whipping Cream
- 1/2 cup Shredded Parmesean Cheese
- 9 Lasagna Noodles cooked and drained
Vinegar BBQ Sauce- Gallon

Combine all items in pot. Bring to low boil, then cool
- 10 cups- Cider vinegar
- 2 cups- white vinegar
- 4 cups Ketchup
- 1/2 cup Brown sugar
- 2 TBS + 2 TSP salt
- 1 TBS + 1 TSP black pepper
- 1 TBS + 1 TSP seasoned salt
- 2 TSP red pepper flakes
- 2 TSP ground mustard
- 2 TSP onion salt
- 2 TBS + 2 TSP flour
Honey Monk's Red Slaw

Mix together and chill overnight
- 100 100# 100# cabbage
- 1-1/2 1-1/2 1-1/2 gallons ketchup
- 10 10# 10# sugar
- 1/2 1/2 1/2 gallon vinegar
- 8 8 8 oz salt
- 8 8 8 oz black pepper
- 1/4 1/4 1/4 cup cayenne pepper
- to to
- 5 5# 5# cabbage
- 1-1/4 1-1/4 1-1/4 cup ketchup
- 1 1 1 cup sugar
- 1/4 1/4 2 1 plus 2 tbs, 1 tsp vinegar
- 2-1/2 2-1/2 2-1/2 tsp salt
- 2-1/2 2-1/2 2-1/2 tsp black pepper
- 1/8 1/8 1/8 tsp cayenne pepper
Awesome Baked Sea Scallops

Preheat oven to 425 degrees F (220 degrees C)
- 16 sea scallops, rinsed and drained
- 5 tablespoons butter, melted
- 5 cloves garlic, minced
- 2 shallots, chopped
- 3 pinches ground nutmeg
- salt and pepper to taste
- 1 cup bread crumbs
- 4 tablespoons olive oil
- 1/4 cup chopped parsley
- lemon wedges for garnish (optional)
Bacon Cheese Grits

Place diced bacon in a cold cast iron skillet and begin to cook over medium heat until the bacon is crisp
- 6 strips of thick bacon, diced
- 2 cups chicken stock
- 2 cups whole milk
- 1 cup white or yellow grits
- 1/2 tsp. salt
- 1/2 cup cream
- 1-1/2 cups grated white cheddar cheese
- 4 green onions

Preheat the oven to 350° F
- 1 1/2 lbs large sea scallops, rinsed and patted dry
- 2 Tbs all-purpose flour
- 4 Tbs canola oil, divided
- 1 garlic clove, minced
- 1 6 ounce bag prewashed baby spinach
- 2 Tbs all-purpose flour
- 1 1/2 cups 1% lowfat milk
- 1 cup reduced fat preshredded Cheddar cheese
- 1/4 cup grated Parmesan cheese, divided
- 2 Tbs dry sherry
- 2 Tbs plain dried breadcrumbs

- 1 can Hormel Chilli with or without beans
- 1 Jar salsa
- 1 (8 ounce) cream cheese
