- 2 split (1 whole) boneless, skinless chicken breasts
- Kosher salt and freshly ground black pepper
- 1/2 cup all-purpose flour
- 1 extra-large egg
- 1/2 tablespoon water
- 3/4 cup seasoned dry bread crumbs
- Good olive oil
- 3 tablespoons unsalted butter, room temperature, divided
- 1/3 cup freshly squeezed lemon juice (2 lemons), lemon halves reserved
- 1/2 cup dry white wine
- Sliced lemon, for serving
- Chopped fresh parsley leaves, for serving
Buffalo Chicken Pasta

Preheat oven to 375 degrees F
- 1 pound pasta (I used whole wheat orecchiette)
- 3 boneless, skinless chicken breasts, cooked and cut into chunks
- 1 tablespoon butter
- 1 tablespoon flour
- 1 1/2 cups milk
- 4 ounces freshly grated monterey jack cheese (I used half a brick) + more for topping
- 1/3 cup freshly grated sharp cheddar cheese + more for topping
- 1/3 cup buffalo wing sauce
- 1/3 cup panko bread crumbs
- salt and pepper to taste
- for garnish: 3/4 cup chopped green onions, 1/2 cup fresh cilantro, 1/2 cup gorgonzola cheese, additional buffalo wing sauce

- 1 (8-ounce) package Kraft Shredded Sharp Cheddar Cheese, divided
- 1/4 cup Heinz Tomato Ketchup
Grilled Strawberry Shortcake with Lemon Cream

Preheat a grill to medium-high heat
- 1/2 cup heavy cream
- 3 tablespoons powdered sugar
- 1/4 teaspoon vanilla extract
- Zest of 1/2 lemon
- 1/2 cup sour cream
- 16 large strawberries, from a 1-pound package, hulled
- 3/4 cups powdered sugar
- 1/4 cup lemon juice
- 1 store-bought pound cake, sliced into 1/2-inch slices
- Special Equipment: 4 metal skewers
Beef, Baked Bean & Cheese Crispy Burritos

Preparation Preheat the oven to 375 degrees
- 8 slices meaty, smoky bacon
- 1 tablespoon vegetable or olive oil
- 1 pound ground beef, 80 percent lean
- Kosher salt and pepper
- 1 small onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 shots (3 oz.) whiskey
- 2 tablespoons Worcestershire sauce
- 1/2 cup beef consomme or beef stock
- 1 can (22 oz.) barbecue-flavor baked beans (I like Bush's.)
- 4 scallions, chopped
- 4 large flour tortillas
- Spicy brown mustard (I like Gulden's.)
- 3/4 pound sharp American, white American or Monterey jack (I like Cooper.), shredded
- 6 gherkin pickles, coarsely chopped
- Natural olive oil cooking spray

Frozen Peanut Butter Pie

Spread 1 cup of topping in bottom of shell, freeze for 10 minutes
- 8 ounces Cool Whip
- 1 9" Pie shell, baked
- 1/3 cup strawberry jam
- 1 cup cold milk
- 1/2 cup chunky peanut butter
- 1 pkg. (4) vanilla instant pudding
Black Bean Burgers

Heat a grill or grill pan over medium-low heat
- Optional Toppings:
- 1/2 medium yellow onion, roughly chopped
- 1 tablespoon chopped garlic
- 2 (15-ounce) cans black beans, rinsed and drained, divided
- 2 tablespoons freshly chopped cilantro leaves
- 2 teaspoons freshly chopped parsley leaves
- 1 egg
- 1/2 teaspoon red pepper flakes
- 3/4 cup italian bread crumbs
- 1 Teaspoon Smokin' Beef
- 4 hamburger rolls
- 1 tomato, sliced
- 4 small Romaine lettuce leaves, or any other type you have on hand
- 1/4 cup ketchup
Crockpot Sour Cream Chicken Enchiladas

- 4 cups cooked, cubed chicken ( I use a rotisserie chicken from the deli)
- 1 can cream of chicken soup ( 1/2 can of water)
- 1 cup sour cream
- 1 10 oz. can Rotel tomatoes or 1 1/4 cups salsa
- corn tortillas (enough to layer with)
- 2 to 3 cups of grated cheese, cheddar or Monterey Jack or a combo ( I used Queso Quesadilla cheese)
Paul Prudhomme's Blackened Seasoning Blend

Mix all ingredients well. This seasoning is fantastic when used on not only fish, but chicken and steak as well

- 2 1⁄2 teaspoons salt
