- 4 tbs butter
- 2 tbs honey
- 1 1/2 pounds pork tenderloin, trimmed
- 1/2 tsp Cajun seasoning
- 1/2 tsp black pepper
- 3/4 cup water
Pumpkin Whoopie Pies with Cream Cheese Filling

Whoopie pies are soft cake like sandwiches filled with creamy cream cheese filling
- 3 cups all purpose flour
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup brown sugar
- 1 cup splenda
- 1 cup vegetable oil
- 1 (15 ounce) can of pumpkin
- 2 large eggs
- 1 teaspoon vanilla extract
- Cream Cheese Filling
- 1 (8 ounce) package of cream cheese, softened
- 1 stick of unsalted butter, room temperature
- 1 (16 ounce) package of powdered sugar
- about a capful of vanilla extract
- A pinch of cinnamon to taste
Butternut Squash Soup

- 1 large butternut squash, peeled and cut into 1" cubes.
- 1.5 sticks of butter
- 2-4 oz heavy cream
- 2 oz rough chopped, de-stemed, fresh thyme
- 6-7 bay leaves
- 32 oz Chicken Stock (homemade if possible, otherwise Swanson's Low Sodium
- 1 med Shallot, diced
- 1/2 Yellow Onion, diced
- 4 cloves garlic, minced
- creme fraische, sour cream, crema, yoghurt or similar...
- salt
- Fresh cracked pepper
- Whole Nutmeg
- 1/8 tsp Ground Cinnamon (optional)
- Wine for chef to enjoy during cooking.
Easy Oven Roasted Potatoes

Slice potatoes into very thin slices (1/4 inch)
- 2 large potatoes, scrubbed
- 3 Tbsp olive oil
- 1 Tbsp Italian Seasoning
- 1 tsp salt
- 4 Tbsp Parmesan cheese
Maple Grilled Salmon

1. Combine first 3 ingredients in a large zip-top plastic bag; add fish
- 1/4 cup rice wine vinegar
- 3 tablespoons maple syrup
- 2 tablespoons fresh orange juice
- 4 (6-ounce) salmon fillets, skinned
- Cooking spray
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper

- 1 1/2 cups graham cracker crumbs
- 1/2 cup white sugar
- 1/4 cup butter, melted

- 5 eggs
- 2 egg yolks
- 1 3/4 cups white sugar
- 1/8 cup all-purpose flour
- 1/4 cup heavy whipping cream
Southern Red Velvet Cake

- Vegetable oil for the pans
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon fine salt
- 1 teaspoon cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, at room temperature
- 2 large eggs, at room temperature
- 2 tablespoons red food coloring (1 ounce)
- 1 teaspoon white distilled vinegar
- 1 teaspoon vanilla extract
- Cream Cheese Frosting, recipe follows
- Crushed pecans, for garnish
- 1 pound cream cheese, softened

Pizza Dough

In a large mixing bowl, preferably that of a stand mixer, stir yeast and honey into warm water
- 1 cup warm water
- 2 1/4 teaspoons active dry yeast
- 1 tablespoon honey {or sugar}
- 2 teaspoons salt
- 2 tablespoons olive or canola oil
- 3 cups bread flour {give or take 1/2 cup...depending on the heat & humidity}

- 2/3 cup all-purpose flour
- 7 cups milk
- 4 large baked potatoes, peeled and cubed
- 4 green onions, chopped
- 1 1/4 cups shredded Cheddar cheese
- 1 cup sour cream
- 1 teaspoon salt
- 1 teaspoon ground black pepper
