Southern Cornbread Dressing

1. Place the chicken breast halves in a large saucepan with enough water to cover
- 4 skinless, boneless chicken breast

- 1 (16 ounce) package dry corn bread mix
- 1 (1 pound) loaf day-old white bread,
- torn into small pieces
- 4 tablespoons margarine
- 1/2 cup chopped onions
- 1/2 cup chopped celery
- 1 (10.75 ounce) can condensed cream
- of chicken soup
- 1/8 teaspoon garlic powder
- 2 teaspoons poultry seasoning
- 1/2 teaspoon ground black pepper
- 6 eggs
Creamy Italian Chicken

Instapot Recipe
- 1lb (or more) uncooked chicken breast, sliced 1/4"
- 2 cups penne (only the 10-12 minute cooking kind, quicker cooking pasta will be soft)
- 1 14.5oz can fire roasted tomatoes + 3/4 can of chicken stock (or water)
- 2 tablespoons tomato paste
- 1 tablespoon basil
- 1 teaspoon oregano
- 1/4 teaspoon red pepper flakes
- pinch of salt and pepper
- 1 tablespoon olive oil (for flavor)
- 2 cloves of garlic, chopped
- 1 medium onion, diced
- 3 oz cream cheese
- 1/2 cup Parmesan cheese
Cuban Flank Steak

Combine marinade ingredients
- Marinade Ingredients:
- 1 large piece of flank steak (this recipes makes enough marinade for 1-3 pounds of meat)
- 1/3 cup fresh lime juice
- 1/4 cup olive oil
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 T soy sauce
- 1/2 tsp. ground chipotle chile powder (or use your favorite hot sauce)
- 2 tsp. lime zest (optional)
Pecan Pie Squares

Sift together 2 cups flour and 2/3 cup powdered sugar
- 2 cups all-purpose flour
- 2/3 cup powdered sugar
- 3/4 cup butter, softened
- 1/2 cup firmly packed brown sugar
- 1/2 cup honey
- 2/3 cup butter
- 3 tablespoons whipping cream
- 3 1/2 cups coarsely chopped pecans
Grandma's Corn Bread Dressing

1.Prepare the dry corn bread mix according to package directions
- 1 (16 ounce) package dry corn bread mix
- 2 tablespoons butter
- 1/2 cup chopped celery
- 1 small onion
- 2 eggs, beaten
- 2 cups chicken stock
- 2 tablespoons dried sage
- salt and pepper to taste
Reese’s Pieces Peanut Butter Blondie's

Preheat oven to 350 degrees
- 1/2 cup (1 stick) butter (I used Land O Lakes light butter)
- 2 cups brown sugar (I used dark, but light would work as well)
- 1/2 cup creamy peanut butter
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 3/4 cup Reese’s Pieces

Barb's Cranberry Relish Salad

Mix up. Now let it sit about an hour before you refrigerate
- 1 large bag fresh cranberries, prepare as stated on bag. It gets extremely hot once you add the sugar, be careful. Cook it down to texture you are happy with. I always go a little longer than it says. LET IT COOL COMPLETELY
- ...add 3 cans of ocean spray whole berries
- ...Zest of half an orange Med+
- ...Good squeeze of the juice in the orange.
- ...1 med apple peeled and finely chopped
- ...cup of chopped walnuts or more if you like
- ...1 can of Mandarin oranges very well drained and chopped.
Barb's 5 cup Salad

Pecan Butter Balls (Mexican Wedding Cookies)

- 1 cup unsalted butter, room temp
- 1/4 granulated cup sugar
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 1 1/2 cups finely chopped pecans or walnuts
- powdered sugar for coating
