Sweet Potato Souffle

- Topping:
- 4 Cups Mashed Sweet Potatoes
- 1 Cup of Sugar
- 2 Eggs
- 1/2 Cup Milk
- 1/2 Tsp Salt
- 1/3 Stick of Butter Melted
- 1 Tsp Vanilla
- 1 Cup of Brown sugar
- 1/2 Cup Flour
- 1/3 Cup Butter Melted
- 1 Cup Pecans chopped/chips
Farm House Carrots

Oven to 400' 1. In a small bowl, warm the butter, honey and cider vinegar together
- 2 Bunches Carrots (about 15ish carrots)
- 1 Cup Thinly Sliced Spring Onion
- 1/4 Cup Roughly Chopped Savory*
- 2 Tbsp. Honey
- 1 1/2 Tbsp. Unsalted Butter
- 2 Tbsp. Apple Cider Vinegar
- Salt/Pepper
- Fresh chives for garnish
Classic Italian Meatballs

Preheat oven to 375 degrees
- 4 eggs, slightly beaten
- 1/4 cup water
- 1 cup buttermilk
- 1-1/2 cup unseasoned bread crumbs (I use whole wheat)
- 4 teaspoons minced garlic
- 1 medium onion, finely minced or grated
- 1 cup fresh Italian parsley, chopped
- 1 cup grated Parmesan cheese
- 1 tablespoon dried leaf oregano
- 2 teaspoons kosher salt
- 1 tablespoon ground black pepper
- 1-1/2 lbs. ground pork
- 3 lbs. ground beef
Coconut Cake with Coconut Buttercream

This recipe is a lot of work, but so worth it
- Coconut Simple Syrup:
- 1 1/2 cups (3 sticks) unsalted butter, room temperature, plus more for pan
- 3 cups unbleached all-purpose flour
- 1 teaspoon baking powder, preferably aluminum free
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground cardamom
- 3/4 cup cream of coconut, such as Coco Lopez
- 1 1/2 teaspoons pure vanilla extract
- 1 1/2 teaspoons pure almond extract
- 2 cups sugar
- 6 large eggs, room temperature
- Coconut Simple Syrup (See Below)
- Coconut Buttercream (See Below)
- 3 cups sweetened flaked coconut
- 1 cup sugar
- 1 teaspoon pure coconut extract
- Coconut Buttercream:
- 1/2 cups all-purpose flour
- 2 cups whole milk
- 2 teaspoons pure vanilla extract
- 2 teaspoons pure coconut extract
- 2 cups (4 sticks) unsalted butter, room temperature
- 2 cups confectioners’ sugar
Homemade Caramel Apples

1. Wash the apples, remove the stems (and any stickers!) and refrigerate them overnight
- 2 bags Caramel Bits
- 10 Granny Smith apples
- Assorted chocolates for melting
- Assorted candies, chips, etc. for rolling
Margaritas

- 1 (6 ounce) can frozen limeade
- concentrate
- 6 fluid ounces tequila
- 2 fluid ounces triple sec
Pretzel Cookies with Chocolate & Peanut Butter Chips

In a medium bowl, sift together the flour, baking soda, and salt
- 1 1/2 cups of all purpose flour
- 1/2 tsp. of salt
- 1/4 tsp. of baking soda
- 1/2 cup of butter at room temperature
- 1/2 cup of tightly packed light brown sugar
- 1/3 cup of granulated sugar
- 1 egg (beaten)
- 1 tsp vanilla extract
- 1 cup milk chocolate chips
- 1/2 cup peanut butter chips
- 1/2 cup broken up pretzel pieces
- Pretzel Salt or Sea Salt
Baked Parmesan Tomatoes

Preheat oven to 450° F. Place tomatoes cut-side up on a baking sheet
- 4 tomatoes, halved horizontally
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon chopped fresh oregano
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 4 teaspoons extra-virgin olive oil
Chili

1. Heat a large stock pot over medium-high heat
- 2 pounds ground beef chuck
- 1 pound bulk Italian sausage
- 3 (15 ounce) cans chili beans, drained
- 1 (15 ounce) can chili beans in spicy
- sauce
- 2 (28 ounce) cans diced tomatoes with
- juice
- 1 (6 ounce) can tomato paste
- 1 large yellow onion, chopped
- 3 stalks celery, chopped
- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 2 green chile peppers, seeded and
- chopped
- 1 tablespoon bacon bits
- 4 cubes beef bouillon
- 1/2 cup beer
- 1/4 cup chili powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon minced garlic
- 1 tablespoon dried oregano
- 2 teaspoons ground cumin
- 2 teaspoons hot pepper sauce (e.g.
- Tabasco™)
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon white sugar
- 1 (10.5 ounce) bag corn chips such as
- Fritos®
- 1 (8 ounce) package shredded Cheddar
- cheese
Pinto Beans

Rinse beans in cool water; pour into a pot, cover with water by 2 to 3 inches
- 1 lb Dried Pinto Beans
- 4 slices Thick Bacon (can Also Use Salt Pork, Or Ham Hock, Or Diced Ham)
- 1 teaspoon Salt
- 2 teaspoons Ground Black Pepper
- 1 tsp Chili Powder
- Dash of Garlic Powder
