Vegan Dumplings

In a large pot, place the vegetable stock, and bring to a boil
- 1 Quart vegetable stock or water
- 2 cups unbleached flour
- 2 t. baking powder
- 1 t. salt
- 3 T. Spectrum Spread non-hydrogenated margarine
- 1/4 cup soy milk, rice milk, or other non-dairy milk of choice
- Garnishes: freshly chopped parsley and Spectrum Spread non-hydrogenated margarine
Classic Rice Crispy Treats

1. Begin by heating the syrup in a small pot over medium heat, then add the sugar to the pot
- 1 cup light corn syrup
- 3/4 cup sugar
- 1 tablespoon vegan margarine (I use Earth Balance)

Blueberry Crumb Cake

Preheat the oven to 350 degrees F
- For the streusel:
- 1/4 cup granulated sugar
- 1/3 cup light brown sugar, lightly packed
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/4 pound (1 stick) unsalted butter, melted
- 1 1/3 cups all-purpose flour
- For the cake:
- 6 tablespoons unsalted butter, at room temperature (3/4 stick)
- 3/4 cup granulated sugar
- 2 extra-large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon grated lemon zest
- 2/3 cup sour cream
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup fresh blueberries
- Confectioners' sugar for sprinkling
One-Dish Blackberry French Toast

1. Cook jam in a small saucepan over medium heat 1 to 2 minutes or until melted and smooth, stirring once
- 1 cup blackberry jam 1 (12-oz.) French bread loaf, cut into 1 1/2-inch cubes 1 (8-oz.) package 1/3-less-fat cream cheese, cut into 1-inch cubes
- 4 large eggs
- 2 cups half-and-half
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup firmly packed brown sugar
- Toppings: maple syrup, whipped cream
Sweet Mango Melbas

- 2 tablespoons of bacon fat or oil
- 2 tablespoons of butter, divided
- 1 whole medium Vidalia onion, halved and sliced
- 5 to 6 medium sized yellow or crookneck squash
- Kosher salt and freshly cracked black pepper, to taste
- 1/2 cup of half and half or whole milk
