Gardein Beefless Stew

Heat oil in a large saucepan on medium high heat, add beefless tips and brown on all sides
- 1 package Gardein beefless tips (available in grocery stores nationwide)
- 3 tbsps vegetable oil
- 10 ozs pearl onions, peeled
- 2 cloves garlic, minced
- 2 celery stalks, thinly sliced
- 2 medium carrots, 1/2 inch diced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 3 tbsps flour
- 3 cups vegan "beef" broth (try Better than Bouillon brand) or roasted vegetable stock
- 1 cup dry red wine such as Cabernet Sauvignon
- 2 medium potatoes, 1/2 inch diced
- salt and pepper to taste

Maple Grilled Tempeh Recipe

For those of you wanting to know what brand of tempeh is in the photo - Turtle Island Organic Five Grain Tempeh
- optional (version in photo):
- 8 ounces tempeh
- 3 tablespoons soy sauce (I prefer shoyu sauce)
- 3 tablespoons maple syrup
- 1 teaspoon rice vinegar
- 2 cloves garlic, peeled, crushed and chopped
- 1/2 teaspoon powdered chipotle (or a couple pinches of cayenne)
- 1 -2 portobello mushrooms
- 2 1/2 cups cooked quinoa or brown rice
- a handful of blanched green beans

- 1 pound clementines (about 4 or 5)
- 6 eggs
- 1 cup plus 2 tablespoons sugar (or Sucanat, read about natural sweeteners here)

- 1-1/2 teaspoons tarragon

- 2 yellow onion, chopped
- 1 tbsp. of fresh thyme, finely chopped
- 3 tbsp. of extra-virgin olive oil
- 1/4 tsp. of sea salt (or to taste)
- 1/4 tsp. of ground black pepper (or to taste)
- 6 cup(s) of vegetable broth
- 1/2 cup(s) of dry white wine
- 1/2 tsp. of cardamom
- 2/3 cup(s) of unsweetened soymilk (sweetened is ok, too)
