Tomato Basil Soup

In a saucepan, saute garlic in olive oil on medium heat for 1 minute - being careful not to burn the garlic
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 - 14 oz. cans of crushed tomatoes
- 1 - 14 oz. can of whole tomatoes
- 2 cups of stock (chicken or vegetable)
- 1 tsp of sea salt
- 1 tsp of sugar
- 1/2 tsp of fresh ground black pepper
- 1/4 cup of heavy cream
- 3 tablespoons of fresh basil, julienned
- parmesan cheese
Garlic Tilapia

- 1 1⁄2 lb tilapia fillet
- 4 clove garlic, thinly sliced
- 3 tbsp olive oil
- 1 salt
- 1 lemon, for serving
Sassy Ham and Cheese Sandwiches

- 1 container (8 ounces) cream cheese
- 2 teaspoons chopped fresh chives
- 1 pinch dried thyme
- 1 stick unsalted butter, melted

- 2 tablespoons Worcestershire sauce

Amish Dressing To Freeze Ahead Of Time

Brown Butter Brownies

Preheat oven to 350 and pop in the walnuts until just toasted, about 5 minutes
- 3 1/2 oz dark chocolate (70% cocoa and up)
- 8 tablespoons of unsalted butter 4 eggs, at room temp
- 1 cup white sugar
- 1 cup brown sugar, loose, not packed
- 1/4 cup unsweetened cocoa powder (I used Valrhona)
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon cinnamon
- 1 cup flour 2 teaspoons vanilla extract
- 1 cup coffee, cold
- 1 cup semi-sweet chocolate chips
- 1 cup walnuts, halved and toasted lightly

- INGREDIENTS
- 1 1/2 pound zucchini(about 4 cups), ends trimmed, grated and strained
- 1/4 pound plus 4 tablespoons unsalted butter
- 3 eggs, at room temperature
- 1 1/2 cup rice flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch Kosher or sea salt

Mom's Chili

This is my version of my dad's chili
- 2 lbs ground beef, ground for chili
- 1 onion - chopped
- 2 cloves of minced garlic
- 1 (8 ounce) can tomato sauce
- 1 (14 ounce) can of beef broth
- 1 large can of whole tomatoes
- 2 cups water
- 4 T. Taco Seasonings (I use the large container from Costco)
- 1/2 cup chili powder
- 1 teaspoon ground red pepper
- 1 large can of chili beans
- 1 can of kidney beans
- 1 can of pinto beans
- 2 tablespoons masa harina flour (optional)
- 1/4 cup hot water

- 1 Medium Zucchini
- 1 Medium Yellow Squash
- 1 Shallot (minced)
- 2 Cloves Garlic (minced)
- 1 pint Cherry Tomatoes (halved)
- 3 tablespoons Extra Virgin Olive Oil
- 1 tablespoon Salt (divided)
- 1 teaspoon Fresh Cracked Pepper
- 1/4 cup Sauvignon Blanc or available White Wine
- 3 tablespoons Butter
- 2 teaspoon Fresh Tarragon (chopped)
- 4 ounces Fresh Baby Arugula
- 1 pound Fresh Pappardelle
- 1/2 cup Fresh Ricotta Cheese
- Freshly Grated Nutmeg to taste
